They are usually picked when they are about 1-3 feet long and have a mild flavor that can be used in a variety of dishes. The beans can be cooked in stir fry, soups, salads and more. They are high in protein, fiber.
Ingredients
250 grams Yard Long Beans
50 grams soaked and cooked Green gram
2 tbsp. Oil
1 Onion chopped
Few Curry leaves
3 to 4 Green Chilies
1 tbsp. Chana dal
1/2 tsp Urad dal
1/4 cup Grated coconut
1/4 tsp Turmeric powder
Salt to taste
2 tbsp. Chopped Coriander leaves
1/2 cup Water (add as per requirement)
Directions
- Firstly, soak green moong dal and cook completely and keep it aside.
- Then heat a pan and add in oil, mustard seeds, chana dal, urad dal. Sauté till the dals turns light brown color.
- Later add green chilies, chopped onions, pinch of turmeric powder, few curry leaves and salt to taste. Sauté for a minute.
- Further add in cut yard long beans and give a mix. Later close the lid and cook till the beans are completely cooked.
- Then add in cooked green gram and give a mix. Cook for another 3 to 4 minutes in low flame.
- Finally, add in grated coconut and give a mix. Then switch off the flame.
- At the end garnish it with chopped coriander leaves. Now the healthy and tasty Yard Long Beans Side Dish is ready to serve.
