Chicken Biryani | Ulavacharu biryani is a super delicious Andhra special biryani recipe with step by step pictures and instructions are given below. Ulavacharu is a thick lentil soup made with horse gram, spices and herbs. In Telugu, horse gram is known as ulava and rasam as charu. So, ulavacharu is simply horse gram rasam made in the traditional Andhra style.

So, for making Ulavacharu Chicken biryani firstly we need to marinate it with yogurt, fried onions, spices, chicken, ulavacharu soup, 90 percent cooked basmatic rice. It can be served with raita or gravy of your choice.

Ingredients required for making Ulavacharu Biryani:

Chicken biryani, ulavachary soup, fried onions, thick curd, green chili paste, ginger garlic paste, salt to taste, water as required, bay leaf, cloves, cinnamon stick, cardamom, fennel seeds, shaha jeera, turmeric powder, kasuri methi, coriander leaves, mint leaves, oil, ghee, saffron milk, stone flower.

Methods:

How to make Ulavacharu biryani:

  1. Firstly take a mixing bowl and add in curd, bay leaf, stone flower, crushed cloves, cinnamon, cardamom, javathri, red chili powder, kasuri methi, ginger garlic paste, fried onions, turmeric powder, oil. Give a mix.
  2. Then add in cleaned chicken pieces, coriander leaves, mint leaves.
  3. Give a mix. Allow it marinate for 30 minutes  to 1 hour.
  4. Then heat a pan and add in water, spices like, cloves, cinnamon, cardamom, bay leaf, fennel seeds, salt to taste, little oil.
  5. Then add in soaked basmati rice and allow it cook for 80 percent
  6. Once the basmati rice 80 percent cooked. Drain it off.
  7. Now again heat a large bottom pan and add in marinated chicken mix. And then allow it to cook, till the chicken are 80 percent cooked.
  8. Once the chicken is cooked, at this stage add in ulavacharu biryani | how to make ulavacharu soup.
  9. Then add in cooked basmati rice, chopped coriander leaves, fried onions, ulavacharu soup. Repeat the same for the other layers too.
  10. At the end add in soaked saffron milk.
  11. Now close the lid and place a heavy material like pestle and place a iron pan or tawa and above that place the biryani pot. Then dum cook for 30 minutes under low flame.
  12. Finally the ulavacharu biryani is ready to serve with onion raita or any gravy of your choice.
