Mixed Vegetable Sambar

Mixed Vegetable Sambar is a very healthy and delicious South  Indian Sambar recipe with step by step pictures and instructions are given below. So, it goes well with hot rice, kara pongal, chapati, dosa, idly. Usually I used to make sambar using one or two vegetables, like drumstick sambar, ridge gourd sambar, raddish sambar, but this time I tried this mixed vegetable sambar, It really came out suber delicious and healthy. We can use desi ghee instead of oil, it adds extra taste and nutrition to the sambar.

Ingredients:

Toor dal, masoor dal, onion, tomato, brinjal, beans, ivy gourd, avarekai seeds, potato, ridge gourd, kolhrabi, double beans, fresh toor dal, sambar powder, tamarind, salt to taste, water as required.

Methods:

How to make Mixed Vegetable Sambar:

  1. Firstly clean and cut vegetables of your choice and keep it aside.
  2. Then heat a pan and add in rinsed toor and masoor dal, onion, tomato and required water, salt as per requirement.
  3. Later add in cut vegetables.
  4. Close the lid and pressure cook it for 2 to 3 whistles.
  5. Once the dal and vegetables are pressure cooked, how it looks.
  6. Again place the dal cooked pan on the stove, then add in sambar powder. Give a mix without any lumps.
  7. Then add in tamarind juice.
  8. For seasoning heat a pan and add in oil, mustard seeds, onion, curry leaves, hing. Saute it for 2 minutes or the onions becomes soft or translucent.
  9. Then add in the prepared seasoning to the boiling sambar. At this stage add in salt or chili powder if required. Adjust the consistency by adding water.
  10. Finally the healthy and tasty Mixed Vegetable Sambar is ready to serve with rice, idly, dosa, ragi ball, chapati.

  • 1 Pressure Cooker
  • 1 Seasoning pan
  • 1 Pot

Ingredients
  

  • cup Toor dal
  • ¼ cup Masoor dal Optional
  • 1 Small onion
  • 1 Medium tomato
  • 2 cups Mixed vegetables beans, carrot, binjal, potatoes, avarekai, broad beans, kolhrabi, ridge gourd, bottle gourd, ivy gourd.
  • 2 tsp Sambar powder As per requirement
  • 1 tbsp Tamarind juice
  • Salt to taste
  • Water as required
