Gutti Vankaya | Brinjal Gravy Andhra Style is a spicy and tasty Andhra Style gravy recipe with step by step pictures and instructions are given below. It goes well with hot rice, ragi ball, chapati, pulka, poori, dosa, paratha. It is one of the famous Andhra Stule brinjal gravy, made with brinjal and spice powder.
Ingredients:
Brinjal, onion, tomato, curry leaves, oil, mustard seeds, garam masla, chopped coriander leaves, salt to taste, water as required.
For Grinding:
Peanuts, tamarind, coconut, coriander seeds, red chilies, kasmiri chilies, cumin seeds, curry leaves.
Methods:
- Firstly dry roast peanuts, red chilies, coriander seeds, cumin seeds, curry leaves, tamarind, kashmiri chilies.
- Once the roast ingredients are cool down completely, transfer it into a mixer jar. Ground it into smooth powder.
- Then cut brinjal into four equal half and put it into a water.
- Now stuff the prepared powder inside the cut brinjals.
- Later heat a pan and add in oil, chopped onions, curry leaves, turmeric powder, mustard seeds. Saute it for 2 minutes.
- Add in chopped tomato. Saute till the tomatoes becomes soft.
- Then add in stuffed brinjals, salt to taste, water as required.
- In the same mixer jar add in coconuts and grind it into a smooth paste.
- Now add in grounded coconut paste, then close the lid and cook till the brinjals are completely cooked.
- At this stage if required we can add in garam masala, red chili powder or salt to taste.

- Pan
- Cooking pot
- 6 to 8 Brinjal
- 1 Big chopped onion
- 1 Chopped tomato
- 2 string Curry leaves
- 2 tbsp Oil
- ¼ tsp Mustard seeds
- Salt to taste
- Water as required
- Pinch of turmeric
- ⅛ tsp Garam masala
For Grinding
- ¼ cup Peanuts

- 3 Kashmiri chiles
- Few curry leaves
- 1 tsp Cumin seeds
- Little tamarind
