Ash gourd sambar with coconut is a South Indian dish made using ash gourd (also known as winter melon or white pumpkin) as the main ingredient. Sambar is a popular South Indian lentil-based soup or stew that includes a variety of vegetables, coconut milk and sambar powder.

Ingredients

  • 1/2 cup Toor dal or Masoor dal

  • 300 grams Fresh ash gourds

  • 3 cups water

  • 1 onion medium

  • 1 Tomato medium

  • Few curry leaves

  • 1 tbsp. Sambar powder

  • 1/2 tsp Red chili powder (adjust as per your spice level)

  • 1/2 cup Coconut milk

  • 1 tbsp. Tamarind juice

  • Salt to taste

  • For Seasoning
  • 2 tbsp. Oil/Ghee

  • 1 small onion

  • 1/4 tsp Mustard seeds

  • Few curry leaves

  • Pinch of hing

Directions

  • Firstly, heat a pan or pressure cooker and add in water, allow it to boil. Later add in rinsed toor dal.
  • Then add in sliced onion, tomato and few curry leaves. And then close the lid and pressure cook for 3 whistles.
  • Further, heat another pan and add in oil/ghee, mustard seeds, onion, hing, few curry leaves. Later add in cooked dal and cleaned and cut ash gourd. Allow it to cook till the ash gourd are completely cooked.
  • Salt to taste.
  • Later add in coconut milk and allow to boil for 5 minutes under medium flame.
  • Little tamarind juice and boil for another 3 minutes.
  • Finally, tasty ash gourd sambar is ready to serve.
  • For Seasoning
  • 2 tbsp. Oil

How to make Ash Gourd Sambar with Coconut:

Firstly, heat a pan or pressure cooker and add in water, allow it to boil. Later add in rinsed toor dal.
