Vegetable kurma is one of the delicious gravy or sauce based dish that is popular in South Indian, Kurma is also called as kurma and below is the step by step pictures and instructions of the recipe is given, do check and comment below. So, vegetable kurma is the super aromatic and delicious kurma is made with potatoes, peas, carrots, onions, coconuts, spices, nuts. Vegetable kurma goes well with peas pulao, coconut rice, ghee rice, chapati, poori, dosa, parathas, roti, pulao.

Ingredients:

Potatoes, carrots, green peas, beans, onion, ginger garlic paste, oil, fennel seeds, cloves, cinnamon stick, cardamom, turmeric powder, red chili powder, coriander powder, garam masala powder, chopped coriander leaves, salt to taste, water as required and for grinding we need, cashew nuts, coconuts, roasted gram, onion.

Methods:

How to make Vegetable Kurma:

  1. Firstly heat a pan and add in oil, chopped onions, fennel seeds, cloves, cinnamon, cardamom, bay leaf, ginger garlic paste, green chili. Saute till the raw smell of the ginger garlic goes away.
  2. Then add in cut vegetables, turmeric powder, salt to taste. Saute till the vegetables are 70 percent cooked.
  3. Take a mixer jar and add in cut coconuts, cashew nuts, cut onions, roasted gram. Grind it into a smooth paste. Add in grounded paste.
  4. Then add in required water, red chili powder, coriander powder, garam masala powder. Give a mix and cook till the vegetables and masalas are nicely cooked.
  5. Give a mix and allow it boil for another 5 and then switch off the flame.
  6. Finally the healthy and tasty Vegetable Kurma is ready to serve.

  • Large bottom pan
  • Mixer jar
  • 2 Medium Potatoes
  • 5 Beans
  • 2 Medium Carrots
  • ½ cup Green peas
  • 1 small Onion
  • ½ tsp Ginger garlic paste
  • 1 Bay leaf
  • 2 Cloves
  • 1 inch Cinnamon
  • 1 Cardamom
  • 1 tsp Fennel seeds
  • 2 tbsp Oil
  • Pinch of turmeric
  • ½ tsp Red chili powder
  • 2 tsp Coriander powder
  • 1 tsp Garam masala
  • Salt to taste
  • 1 cup Water (Adjust as per requirement)
  • Chopped coriander leaves for garnishing

For Grinding

  • ⅓ cup Coconut pieces
  • 5 Cashew nuts
  • ½ Onion
  • 1 tbsp Roasted gram
