Vegetable Biryani with Coconut Milk

Vegetable biryani with coconut milk is a rich, flavorful and aromatic Indian rice dish made with a combination of vegetables, long-grain Basmati rice or jeera rice or bullet rice, and coconut milk. This dish offers a unique twist to traditional biryani by incorporating the rich and creamy texture of coconut milk, with a blend of delightful coconut flavor and vegetables gives a touch of sweetness to the dish.

Ingredients

  • 1 tbsp. Ghee

  • 2 tbsp. Oil

  • 250 grams or 1 cup Rice (basmati/jeera rice/bullet rice)

  • 3 cups of Coconut milk or water

  • 1 Star anis

  • 2 Cardamom

  • 2 inch Cinnamon sticks

  • 3 to 4 Cloves

  • 1 tsp Fennel seeds

  • 1 Bay leaf

  • 1 Big Onion sliced

  • 3 to 4 Green chilies

  • 1 tbsp. Ginger garlic paste

  • 1 Tomato chopped

  • 1/4 tsp Turmeric powder

  • 8 to 10 Beans cut

  • 2 Carrots

  • 1 cup Broccoli or Cauliflower

  • 1/2 tsp Red chili powder

  • 1/4 tsp Kashmiri chili powder

  • 1/2 tsp Garam masala powder or biryani powder

  • 1/2 cup Soya chunks cooked

  • 1/4 cup Mint leaves

  • 1/4 cup Coriander leaves

  • Salt to taste

Directions

  • Firstly, heat a flat large bottom pan and add in ghee, oil, spices like cardamom, cloves, cinnamon, fennel sticks and bay leaf.
  • Then add in sliced onion, green chilies. Sauté till the onions turns slightly brown.
  • Later add in cut beans, carrot, broccoli. You can also add other vegetables like peas, cauliflower, capsicum, double beans, potato. Then give a mix and cook for 2 minutes.
  • Further, add in chopped tomatoes and give a mix.
  • Add salt to taste, 1/4 tsp turmeric powder.
  • Now add in cooked and squeezed soya chunks. Give a mix.
  • Later add ginger garlic paste and sauté till the raw smell goes away completely.
  • Add red chili powder, coriander powder and garam masala or biryani masala powder. Give a mix and sauté it for a minutes under low flame without burning the masala.
  • Then add in required coconut milk. If required add little water. Allow it to boil.
  • And then add in soaked rice (any rice of your choice). Give a quick mix.
  • Later add in chopped mint and coriander leaves. Then give a mix and close the lid and allow it cook till the rice is completely cooked.
  • Finally, aromatic Vegetable biryani with coconut milk is ready to serve.
