How to sprout Green Moong

It is a South Indian dish made with legumes or lentils, typically brown channa (kala chana), kabuli chana, peas, cowpeas (lobia), chickpeas (chana dal) or whole green moong dal (green gram dal), horse gram, boiled peanuts. The legumes are soaked, cooked until tender, and then seasoned with spices and aromatics.

Sundal is a nutritious and protein-packed dish that is often served as a snack or a side dish during festive occasions or as a part of a meal. Usli is popular in the southern states of India, particularly in Andhra Pradesh, Tamil Nadu and Karnataka.

It is often finished with a squeeze of lemon juice or a sprinkling of grated coconut for added freshness. Fresh coriander leaves or curry leaves can be used as a garnish.

Sprouted green gram sundal is a nutritious and delicious South Indian dish made with sprouted green grams, also known as mung beans or green moong dal. Sundal or Usli is a popular snack or side dish prepared during festive occasions or as a healthy evening snack.

Ingredients

  • 2 tbsp. Oil

  • 1/2 tsp Mustard seeds

  • 1 tsp Channa dal

  • 1 tsp Urad dal

  • 2 Green chilies

  • 1 Onion chopped

  • Few Curry leaves

  • Salt to taste

  • 1/4 tsp Turmeric powder

  • 2 cups Sprouted Moong dal

  • 1 to 2 cups of Water (add as per requirement)

  • 1/3 cup Carrot grated

  • 1/2 cup Fresh coconut grated

  • Fresh coriander leaves

Directions

  • Heat a pan and add in oil, mustard seeds, channa dal, urad dal, onion, turmeric powder, green chilies, few curry leaves and salt to taste. Sauté for a minute under medium flame.
  • Add sprouted green moong dal or soaked dal which ever is available.
  • Further, add in required water.
  • Then close the lid and allow it to cook.
  • Once the dal is cooked, garnish it with grated carrot, coconut and chopped coriander leaves. Give a mix.
  • Finally, healthy and tasty Sprouted green gram sundal is ready to serve.

Notes

  • You can use sprouted green gram or even soaked and cooked green gram.
  • Instead of green chilies you can also use dry chili or chili powder. Taste may vary.
  • To enhance the taste you can also add pomegranate, chopped cucumber too.

Heat a pan and add in oil, mustard seeds, channa dal, urad dal, onion, turmeric powder, green chilies, few curry leaves and salt to taste. Sauté for a minute under medium flame.
