Gongura Chicken Recipe Andhra Style

Gongura chicken is a popular and tasty dish from the region of Andhra Pradesh in India. It is a unique combination of chicken cooked with Gongura leaves. These leaves are also known as sorrel leaves or red sorrel leaves. Further, Gongura leaves have a tangy and slightly sour flavor, which adds a distinctive taste to the dish.

It goes well with hot steamed rice, biryani, or any Indian bread like chapati, roti, poori, kulcha or naan. The tangy and spicy flavors of the Gongura leaves combined with the tender chicken make it a delightful dish for any occasion.

These gongura leaves may find them in frozen or dried form in specialty stores. If you cannot find these leaves, you may also try making this dish with other greens such as spinach, fenugreek leaves, mint and coriander leaves, although the taste might differ slightly from the traditional version. Gongura chicken is a popular and tasty dish from the region of Andhra Pradesh in India. It is a unique combination of chicken cooked with Gongura leaves. These leaves are also known as sorrel leaves or red sorrel leaves. Further, Gongura leaves have a tangy and slightly sour flavor, which adds a distinctive taste to the dish.

Ingredients

  • 1 cup or small bunch of Gongura leaves

  • 1/2 kg Chicken

  • 1/4 Oil

  • 2 Green chilies

  • 2 Dry red chilies

  • 2 big Onions

  • Few Curry leaves (optional)

  • 1 tbsp. Ginger garlic paste

  • 1 big Tomato

  • 1/4 tsp Turmeric powder

  • 1 tsp Red Chili powder

  • 2 tsp Coriander powder

  • 1 tsp Garam masala

  • 1/4 cup Cashew nut

  • Salt to taste

  • 2 to 3 cups Water

Directions

  • Firstly, clean and rinse gongura leaves and keep it aside.
  • Then heat a pan and add in a table spoon of oil and gongura leaves. Later add little water and close the lid. Cook for 5 to 7 minutes. And then transfer to a mixer jar.
  • Further, allow it cool down and grind it into a smooth paste.
  • Now heat a pan and add on oil, green chilies and red chilies.
  • Add finely chopped onions and salt to taste. Sauté till the onions becomes slightly brown.
  • Later add in ginger garlic paste and cook till the raw smell goes away completely.
  • Add tomato paste. Give a mix and cook till the raw smell goes away.
  • Its time to add spices like turmeric powder, chili powder, coriander powder and garam masala powder. Give a mix and sauté for a minute.
  • Then add in cleaned chicken and little water.
  • Close the lid and cook for 7 to 10 minutes.
  • And then add ground gongura leaves paste.
  • Close the lid and cook for another 5 to 8 minutes.
  • At the end add in cashew nut paste. It is purely optional. Cook for 2 to minutes and switch off the flame.
  • Finally, Gongura Chicken is ready to serve.
