Ridge gourd skin chutney
Ridge gourd skin or peel chutney is a healthy and tasty chutney recipe. Ridge gourd is a healthy vegetable which contains good amount of fiber, vitamins and minerals. Peel or skin of ridge gourd is a rich source of dietary fiber and other nutrients and low in calories.
- Pan
- Mixer jar
- 1 cup Ridge gourd skin
- ¼ cup Peanuts
- 1 tbsp Roasted channa
- ¼ cup Coconut
- Few curry leaves
- 4 Green chilies
- 3 cloves Garlic
- Salt to taste
For Seasoning
- 1 tsp Oil
- ¼ tsp Urad dal
- 2 Dry chilies
- Few curry leaves

Firstly peel the skin of the ridge gourd, wash them and keep it aside.

Now heat a pan and dry roast peanuts, roasted channa till brown and keep it aside.

And then dry roast ridge gourd skin, onions, garlic, green chilies and coconuts. Cook for 2 to 3 minutes in low flame.

Allow it cool down completely and then ground them into a smooth paste.

And then heat a pan and add in oil, mustard seeds, urad dal and curry leaves.

Finally the add in the prepared seasoning to the ground chutney and serve with dosa, idly, chapathi and rice.
