The main ingredients are fresh coriander leaves and mint leaves which gives a nice aroma, flavor and color to the dish. Further adding a freshly ground masala paste and coconut, cashew nut, poppy seeds paste gives a fresh, creamy, and rich taste to the dish.
White Vegetable Kurma or Saravana Bhavan White Kurma
is a traditional and delicious variety kurma recipe, further in this white kurma we don’t add spices like red chili powder, coriander or garam masala, mint leaves or coriander leaves because it may change the color of the kurma.

- Pressure Cooker
- Mixer jar
- 1 Onion sliced
- 1 Tomato chopped
- 2 tbsp Oil or ghee
- 1 Bay leaf
- 2 Cloves
- 1 Cardamom
- 1 inch Cinnamon stick
- 1 tsp Fennel seeds
- 2 Carrots
- ½ cup Double beans
- ½ cup Frozen beans
- 2 Potatoes
- 1 tsp Red chili powder
- 1 tbsp Coriander powder
- 1 tsp Garam masala powder
- Salt to taste
- 2 to 3 cups Water
Masala paste
- ½ cup Coconut pieces
- 4 Cashew nuts
- 2 tsp Poppy seeds
- ½ tsp Fennel seeds
- ½ cup Mint leaves
- ½ cup Coriander leaves
- 4 to 6 Garlic pods
- 1 inch Ginger

Heat a pan or pressure cooker and add in oil or ghee, bay leaf, cloves, cinnamon sticks, and cardamom. Stir fry for a minute.

Add in sliced onions, and cut tomato. Saute till soft.

Later add in vegetables like carrots, potatoes, green peas, double beans, etc, of your choice.

Add turmeric powder, and salt to taste. give a mix.

In a mixing, jar adds onion, ginger garlic, and coconut pieces.

In the same jar add cashew nuts, fennel seeds, and poppy seeds.

Further, add in mint leaves and coriander leaves, and grind them into a fine paste.

And then add in the ground masala paste, red chili powder, coriander powder, and garam masala. Give a mix. Taste check if required add salt to taste at this stage.

Close the lid and pressure cook it for 2 to 3 whistles.

Finally, Vegetable Kurma is ready to serve.
