This chicken curry is seasoned with a mix of spices and nuts, which may include ground coriander, cumin, red chili powder, turmeric, cardamom, bay leaf, pepper corns, fennel seeds, green chilies (optional) and garam masala. The spice levels can vary depending on personal preference.

Ingredients

  • For Marination
  • 1/2 Chicken

  • 1/2 tsp Turmeric powder

  • 1 tsp Chili powder

  • 2 tbsp. Lemon juice

  • Salt to taste

  • For Grinding
  • 1 tbsp. Oil

  • 2 Onions

  • 1 inch ginger

  • 15 pods Garlic

  • 6 Almonds

  • 6 Cashew nuts

  • For Gravy
  • 3 tbsp. Oil

  • 2 Bay leaf

  • 1 tsp Fennel seeds

  • 3 Cardamom

  • 10 Pepper corns

  • 1 tsp Garam masala

  • 1 tbsp. Coriander powder

  • 4 Green chilies

  • 2 tbsp. Thick curd

  • 1 tbsp. Kasuri methi

  • 1 cup Water (adjust as per requirements)

  • Salt to taste

Directions

  • Firstly, take a mixing bowl and add in chicken, turmeric powder, chili powder, salt to taste and squeeze some lemon juice.
  • Close the lid and allow it to marinate for 30 minutes.
  • Now heat a pan and add in oil, onion, ginger, garlic, almonds and cashew nuts. Sauté till it turns slightly brown.
  • Transfer to a mixer jar and grind it into a smooth paste.
  • In the same pan add in oil, bay leaf, cardamom, pepper corns, fennel seeds.
  • Add in ground paste. Give a mix and allow it to cook till the oil separates the pan.
  • Later add in garam masala and coriander powder. Give a mix.
  • Further, add in marinated chicken and salt to taste.
  • Add green chilies ( as per your spice level) and water (as per requirement). Allow it to cook till the chicken is completely cooked.
  • At the end add in kasuri methi.
  • Allow it cook till the chicken is nicely cooked and also oil separates the pan.
  • Finally, rich and tasty Mughlai chicken curry is ready to serve.

How to make Mughlai Chicken Curry

Firstly, take a mixing bowl and add in chicken, turmeric powder, chili powder, salt to taste and squeeze some lemon juice.
