Ingredients
1 cup or small bunch of Gongura leaves
1/2 kg Chicken
1/4 Oil
2 Green chilies
2 Dry red chilies
2 big Onions
Few Curry leaves (optional)
1 tbsp. Ginger garlic paste
1 big Tomato
1/4 tsp Turmeric powder
1 tsp Red Chili powder
2 tsp Coriander powder
1 tsp Garam masala
1/4 cup Cashew nut
Salt to taste
2 to 3 cups Water
Directions
- Firstly, clean and rinse gongura leaves and keep it aside.
- Then heat a pan and add in a table spoon of oil and gongura leaves. Later add little water and close the lid. Cook for 5 to 7 minutes. And then transfer to a mixer jar.
- Further, allow it cool down and grind it into a smooth paste.
- Now heat a pan and add on oil, green chilies and red chilies.
- Add finely chopped onions and salt to taste. Sauté till the onions becomes slightly brown.
- Later add in ginger garlic paste and cook till the raw smell goes away completely.
- Add tomato paste. Give a mix and cook till the raw smell goes away.
- Its time to add spices like turmeric powder, chili powder, coriander powder and garam masala powder. Give a mix and sauté for a minute.
- Then add in cleaned chicken and little water.
- Close the lid and cook for 7 to 10 minutes.
- And then add ground gongura leaves paste.
- Close the lid and cook for another 5 to 8 minutes.
- At the end add in cashew nut paste. It is purely optional. Cook for 2 to minutes and switch off the flame.
- Finally, Gongura Chicken is ready to serve.
