Masala puri or Masalpuri, is a most famous and delicious Indian snack, which is especially popular in Karnataka. Further, it has become popular in most part of India that is bursting with flavors and spices. When it is raining, usually I like to have this mouth watering masala puri.
PREPARATION:
Firstly, you need to prepare papdi puri. Further, prepare white or green peas masala gravy. Later keep it ready green chutney and tamarind sweet chutney for toppings. Then in plate crush papdi puris, and then add prepared peas masala, and for toppings add in chopped onions, grated carrots, chopped coriander leaves, mint and tamarind chutney. Sprinkle pinch of cumin and chat masala powder. Finally add sev. And serve hot.
TIPS:
1. You can adjust the spiciness of the masala, as per your taste preferences.
2. Feel free to add topping as per your taste like grated carrot, chopped cucumber or pomegranate seeds.
3. And it is always best to serve hot to enjoy its freshness and crispiest best.

Ingredients
- FOR PREPARING PAPDI PURI
Wheat flour 1 cup
Rava 1/4 cup
Ajwain 1/2 tsp
Oil 1 tbsp.
Water as required
Oil for deep frying
- FOR MAKING PEAS MASALA GRAVY:
Green or Yellow Peas
Ginger 2 inch
Garlic 4
Dry red chilies 5
Green chilies 5
Cloves 8
Cinnamon 2 inch
Pepper 1/4 tsp
Coriander leaves little
Turmeric powder 1/4 tsp
Salt to taste
Water as required
- FOR ASSEMBLING MASALA PURI:
Papadi puri
Chopped onion 1
Grated carrot 1
Chopped coriander leaves little for garnishing
Green chutney
Sweet tamarind chutney
Cumin powder
Chat masala powder

Directions
- FOR PREPARING PAPDI PURI:
- Firstly, for making papdi puri. Take a large bowl and add in 1 cup wheat flower and 1/4 cup rava (Chiroti rava), 1/2 tsp ajwain, salt to taste, 1 tbsp. oil. Knead the dough by adding required water.
- Prick the papdi with the help of a fork to prevent from puffing up.
- Roll it into a slightly thick flat bread or as poori. Then using a cookie cutter or glass cut small puri.
- Thickness should be as shown in the image.
- Now deep fry the papadi in medium hot oil. Fry till they turn crispy and golden in color. Then set aside.
- FOR MAKING PEAS MASALA GRAVY:
- Secondly for making peas masala. For this first we need to rinse and soak dry green peas or yellow peas for overnight.
- Then in a pressure cooker add in soaked peas and salt to taste. Later pressure cook it for 4 to 5 whistles.
- Now take a mixer jar and add in 2 inch ginger, 4 garlic, 5 dry red chilies, 5 green chilies, 8 cloves, 2 inch cinnamon, 1/4 tsp pepper, and little coriander leaves.
- Add required water and grind it into a smooth paste.
- After pressure cooking peas, add in freshly ground masala paste.
- Add 1/4 tsp turmeric powder. Further, allow it boil for 15 to 20 minutes under medium to low flame.
- Finally spicy and tasty peas masala is ready.
- FOR ASSEMBLING MASALA PURI:
- Now for assembling masala puri, in a serving plate crush 4 to 5 crispy papdi or pani puri.
- Pour in ladleful of prepared peas masala gravy.
- Now top it with a spoon of green chutney.
- And then top it with sweet tamarind chutney.
- Also, top it with chopped onions, grated carrot, chopped coriander leaves.
- Sprinkle pinch of cumin and chat masala powder.
- And finally, top it with sev and serve hot. Enjoy…
