Ingredients
1 tbsp. Ghee
2 tbsp. Oil
250 grams or 1 cup Rice (basmati/jeera rice/bullet rice)
3 cups of Coconut milk or water
1 Star anis
2 Cardamom
2 inch Cinnamon sticks
3 to 4 Cloves
1 tsp Fennel seeds
1 Bay leaf
1 Big Onion sliced
3 to 4 Green chilies
1 tbsp. Ginger garlic paste
1 Tomato chopped
1/4 tsp Turmeric powder
8 to 10 Beans cut
2 Carrots
1 cup Broccoli or Cauliflower
1/2 tsp Red chili powder
1/4 tsp Kashmiri chili powder
1/2 tsp Garam masala powder or biryani powder
1/2 cup Soya chunks cooked
1/4 cup Mint leaves
1/4 cup Coriander leaves
Salt to taste
Directions
- Firstly, heat a flat large bottom pan and add in ghee, oil, spices like cardamom, cloves, cinnamon, fennel sticks and bay leaf.
- Then add in sliced onion, green chilies. Sauté till the onions turns slightly brown.
- Later add in cut beans, carrot, broccoli. You can also add other vegetables like peas, cauliflower, capsicum, double beans, potato. Then give a mix and cook for 2 minutes.
- Further, add in chopped tomatoes and give a mix.
- Add salt to taste, 1/4 tsp turmeric powder.
- Now add in cooked and squeezed soya chunks. Give a mix.
- Later add ginger garlic paste and sauté till the raw smell goes away completely.
- Add red chili powder, coriander powder and garam masala or biryani masala powder. Give a mix and sauté it for a minutes under low flame without burning the masala.
- Then add in required coconut milk. If required add little water. Allow it to boil.
- And then add in soaked rice (any rice of your choice). Give a quick mix.
- Later add in chopped mint and coriander leaves. Then give a mix and close the lid and allow it cook till the rice is completely cooked.
- Finally, aromatic Vegetable biryani with coconut milk is ready to serve.
