Ingredients in a stew can include any combination of vegetables like, beans, carrot, peas ect, and may also include meats too. So, the ingredients used in this recipe are thick and thin coconut milk, vegetables like chopped carrot, beans, green peas, onion, curry leaves, ginger, salt to taste, oil and for grinding we need cashew nuts, poppy seeds, green chilies, poppy seeds, cinnamon, cloves.

How to make Homemade Coconut Milk Recipe:
Vegetable Stew or Veg Stew
Vegetable Stew or Veg Stew is a healthy and tasty recipe. Stew goes well with appam, hoppers, dumplings etc. Stew can be made with vegetables, meat.
- Mixer jar
- Pan
- 2 Chopped carrots
- 1 Chopped Potatoes
- ⅓ cup Frozen peas
- 2 tbsp Coconut oil or any other oil
- 2 spring Curry leaves
- 1 inch Ginger
- 1 medium Chopped onions
- Salt to taste
- 1 Thick and thin coconut milk
For Grinding
- 2 tbsp Poppy seeds
- 10 nos. Cashew nuts
- 1 inch Cinnamon
- 3 Green chilies
- 1 Cloves

Firstly grind poppy seeds, cashew nuts, cinnamon, green chilies, clove into a smooth paste.

Extract coconut milk and keep it aside.

Later heat a pan and add in oil, chopped ginger, onions, curry leaves. Saute till transparent. Then add in grounded paste and cook for 3 to 5 minutes in low flame.

Then add in chopped vegetables, thin coconut milk, salt to taste and cook till the vegetables are nicely cooked.

Finally add in thick coconut milk and close the lid and cook for another 3 minutes in low flame.

Finally the healthy and tasty vegetable stew is ready to serve with appam or hoppers.
