So, the ingredients used in this recipe are boiled rice, fresh caroots, oil, mustard seeds, urad dal, channa dal, cashew nuts, curry leaves, onion, crushed garlic, green chili, red chili, peanuts, coriander leaves, turmeric powder.

How to make Spicy carrot rice or Lunch box recipe:

Spicy Carrot Rice
Heat a pan and add in oil, mustard seeds, crushed garlic. Saute till slightly brown.

Add in channa dal, uradd dal,peanuts, cashew nuts, red chillies, curry leaves, green chilies, pinch of turmeric, hing and salt to taste. Then saute in low flame or till golden brown.

Then add in chopped onions. Saute it for 30 seconds.

Add in grated carrots and give a mix. Then close the lid and cook for 5 minutes in low flame.

Once the carrot is completely cooked add in cooked rice, chopped coriander leaves and give a quick mix.

Spicy Carrot Rice Recipe is a simple and healthy rice variety recipe, it is one of the best lunch box recipe. It is very easy and simple to prepare at home.

  • Pan
  • 5 Grated carrot
  • 2 Cup Boiled Rice
  • 8 Cashew nuts (Optional)
  • 2 tbsp Oil
  • ½ tsp Mustard seeds
  • 1 tbsp Channa dal
  • 1 tbsp Urad dal
  • ¼ cup Peanuts
  • 1 small Onion (Optional)
  • 2 string Curry leaves
  • 2 Dry red chili
  • 2 Green chili
  • 7 Crushed garlic
  • Pinch of turmeric and hing
  • ¼ Coriander leaves
  • Salt to taste
  1. Firstly clean the peel the skin of the carrot. Later grate it and keep it aside.

  2. Then heat a pan and add in oil, mustard seeds, crushed garlic, saute till golden brown.

  3. Then add in red and green chilies, channa dal, urad dal, peanuts, cahew nuts, few curry leaves, turmeric powder, hing. Saute till golden brown.

  4. Later add in chopped onions, salt to taste and grated carrots. Then close the lid and cook for 5 minutes in low flame.

  5. Once the carrot is cooked and the raw smell goes away add in cooked rice, chopped coriander leaves. Mix well. If required add in salt and green chili. Mix well.

  6. Finally the spicy carrot rice is ready to serve.
