South Indian Mix Veg Korma With Coconut Recipe, Mixed vegetable kurma or korma is a delicious and flavorful Indian dish made with a variety of vegetables like potatoes, green peas, double beans, beans, carrot etc., . If required you can add paneer or mushroom too. Further it is a blend of spices, cashew and coconut paste, which gives the curry a creamy and rich taste to the kurma.

Mixed vegetable kurma is a rich, delicious and flavorful Indian dish made with a variety of vegetables like potatoes, green peas, double beans, beans, carrot etc. even we can add paneer cubes, mushroom etc., cooked in a spiced coconut-based gravy. It’s a popular South Indian vegetarian curry that can be served with plain rice, coconut rice, ghee rice, jeera rice, chapati, paratha, dosa, poori or any Indian bread. Here’s a basic recipe for preparing mixed vegetable kurma.

Ingredients

  • Oil 2 tbsp.

  • Cloves 2

  • Cinnamon 1 inch

  • Cardamom 1

  • Star anise 1

  • Bay leaf 1

  • Big onion 1 sliced

  • Tomato 1 sliced

  • Knol khol 1 chopped

  • Potato 1 cut

  • Carrot 2 cut

  • Double beans 1/2 cup

  • Beans 1/2 cup

  • Cauliflower 1/2 cup

  • Red chili powder 1/2 tsp

  • Coriander powder 1/2 tsp

  • Garam masala 1/4 tsp

  • Salt to taste

  • Chopped coriander leaves for garnishing

  • Masala Paste
  • Cashew nuts 7 to 8

  • Fresh coconut 1/4 cup

  • Ginger 1 inch

  • Garlic 10 cloves

  • Poppy seeds 1/2 tsp

Directions

  • Firstly, take a mixer jar and add in fresh coconut pieces, ginger, garlic, cashew nuts, poppy seeds. Grind it into a smooth paste.
  • Heat a pressure cooker and add in oil, bay leaf, cloves, cinnamon, star anise.
  • Add in sliced onions, tomato. Sauté till the onions turns light brown.
  • Cut vegetables and keep it ready. Vegetables like potato, carrot, double beans, beans, knol khol.
  • And then add in cut veggies and salt to taste. Give a mix.
  • Add red chili powder, coriander powder, and garam masala. Give a mix.
  • Further, add in ground coconut and cashew paste.
  • At the end add in cut cauliflowers and give a mix.
  • Then close the lid and pressure cook it for 2 whistles. And then allow it to cool down completely.
  • Garnish it with freshly chopped coriander leaves.
  • Finally, tasty mixed vegetable kurma is ready to eat.
