MELUKOTE PULIYOGARE GOJJU

Is a popular and authentic tamarind rice recipe. Melukote in Pandavapura taluk of Mandy district, Karnataka. The place is also known as Thirunarayanapuram. Melukote is famous for two temples i.e., Cheluvanarayana Swamy Temple and Yoga Narasimha Swamy Temple and it also famous for Puliyogare that is also known as Tamarind rice.

 

Ingredients

Tamarind, coriander seeds, pepper corn, cumin seeds, sesame seeds, dry red chilies, turmeric powder, peanuts, oil, jaggery, mustard seeds, channa dal, urad dal, curry leaves, salt to taste, dry coconuts, roasted channa, fenugreek seeds, hing.

HOW TO MAKE MELUKOTE PULIYOGARE GOJJU 

 

Melukote Puliyogre
Soak tamarind and extract juice and keep it aside.

Dry roast pepper corns and keep it aside.

And dry roast cumin seeds and keep it aside.

Then dry roast sesame seeds and keep it aside.

Later dry roast coriander seeds and keep it aside.

Further dry roast dry coconuts and keep it aside.

Fry gram dal for 30 seconds and keep it aside.

Dry roast fenugreek seeds, mustard seeds, hing and keep it aside.

Dry roast dry red chilies and kashmiri chilies and keep it aside.

Now allow all the roasted ingredients to cool down completely.

Ground them into smooth powder.

Now heat a pan and add in tamarind juice and cook till the raw smell goes and it becomes thick paste like consistency.

Now add in puliyogare powder and give a mix without any lumps.

Cook for 5 minutes in low flame and switch off the flame and then keep it aside.

Add in jaggery and give a mix.

Heat a pan add in oil, mustard seeds(allow it to splutter), channa dal, urad dal, peanuts, dry red chilies, curry leaves, hing.

Now add in the prepared seasoning to the puliyogare gojju.

MELUKOTE PULIYOGARE GOJJU

Melukote Puliyogare Gojju recipe is a authentic puliyogare gojju recipe or tamarind rice, prepared in temples and festivals. It is a healthy and tasty puliyogare gojju recipe.

  • Pan
  • Mixer
  • 1 Big Lemon size
  • ¼ tsp Turmeric powder
  • 2 tbsp Grated jaggery
  • Salt to taste

For Grinding and tempering

  • 1 tsp Cumin seeds
  • 1 tbsp Coriander seeds
  • 1 tbsp Urad dal
  • 1 tsp Pepper Corns
  • 7 nos Red chilies
  • 1 tbsp Sesame seeds
  • 1 tbsp Desiccated coconut
  • 1 tbsp Roasted gram dal
  • ¼ cup Sesame oil
  • 1 tsp Mustard seeds
  • ½ tsp Hing
  • 2 tbsp Peanuts
  • 5 nos Red chilies
  • 1 Spring Curry leaves
  1. Heat a pan and dry roast cumin, pepper, coriander seeds, urad dal, red chilis, sesame seeds, dry coconut, roasted gram dal and keep it aside.
  2. Now ground them into a smooth powder.
  3. Then heat a pan and add in tamarind juice, turmeric powder, salt to taste, jaggery and allow to cook till the raw smell goes. And then keep it aside.
  4. And then heat a another pan and add in oil, mustard seeds, channa, urad, peanuts, red chilies, curry leaves, hing.
  5. Now add in the prepared seasoning to the puliyogare gojju and give a mix.
  6. Finally the Gojju is ready to serve.
