Paddu is one of the popular breakfast recipe made by steaming batter using a mould. Paddu can also be made spicy and even sweet respectively. Paniyaram is made on a special pan that comes with multiple small indentations. So, the ingredients used in this recipe are rice (we can use any rice which are available at home), sabudhana or sabbaki, poha, fenugreek seeds, moong dal, cumin seeds, chopped onions, grated carrots, chopped green chilies, chopped coriander leaves, salt to taste, water as required, baking soda.
Paddu or Paniyaram goes well with any chutney of your choice or tiffin samber.

Paddu or Paniyaram
Paddu or Paniyaram is a tasty, delicious and popular south Indian breakfast recipe. Paddu goes well wtih tiffin smbar, chutney.
- Mixing bowl
- Mixer jar
- Paddu mould
- 1 cup Rice (Any rice)
- ½ cup curd
- 2 tbsp Sabudana
- ¼ tsp Fenugreek seeds
- ¼ cup poha
- 1 tbsp Soaked moong dal
- 1 Onion chopped
- 2 Green chili chopped
- 1 tsp Cumin seeds
- 2 tbsp Chopped coriander leaves
- 2 string Curry leaves
- ¼ cup Grated carrot
- Salt to taste
- ½ cup Water
- ⅛ tsp Baking soda

Firstly take a bowl and add in rice, poha, sabudana, fenugreek seeds. Rise for 2 to 3 times. Then add in thick curd and little water. Allow it to rest for 2 to 4 hours.

Then take a mixer jar and add in soaked ingredients and ground them into a smooth paste.

Now transfer it into another large bowl, and add in chopped onions, chopped curry leaves, chopped coriander leaves, cumin seeds, chopped green chilies, grated carrots, salt to taste, baking soda. Mix well.

Later heat a paniyaram mould, add in oil, prepared batter and cook on all the side.

Finally the paddu or paniyaram is ready to serve with chutney or samber of your choice.
