Horse gram Sambar or Ulavacharu Recipe (An authentic Andhra Recipe) or Soup Recipe, Ulavalu in Telugu and Kollu in Tamil is a healthy and tasty South Indian Recipe with step by step pictures and instructions are given below. It is a protein rich, low fat, fiber rich and helps to reduce obesity. It is made with horse gram and with some spices. It is a thick, tangy and spicy soup recipe. This soup is good for cold and cough as the horse gram is heat in nature.
In Andhra it is called as Ulavacharu or South Indian soup recipe. It is popular in Guntur and Krishna districts of Andhra Pradesh. This soup or rasam is a spicy, earth flavor and tastes great with hot rice along with some desi ghee. Using Ulavacharu we can make a authentic and traditional Ulavacharu Biryani. We can make veg biryani or non veg biryani too.

How to use Horsegram:
Before using it is better to be soaked overnight, then cooked for a while or can be pressure cooked for 3 to 4 whistles.
Ingredients:
Soaked and pressure cooked horsegram, sambar powder, onion, garlic, pepper, cumin seeds, oil, coconut, tamarind, curry leaves, mustard seeds, red chilies, hing, salt to taste, water as required.

How to make Horse Gram Sambar or Soup:
- Firstly rinse and soak Horse gram overnight or 4 to 6 hours. And pressure cook horse gram for 3 whistles and keep it aside.
- After pressure cooking the horse gram drain off the excess water in other container for making sambar or soup or rasam.
- Now take a mixer jar and add in roasted onions, roasted garlic, cumin seeds, pepper corns, sambar powder, tamarind, coconuts and some cooked horse grams. Ground it into a smooth paste.
- Then add in the grounded paste to the drained dal water, salt to taste and allow it to boil. Boiling horse gram soup or sambar.
- Later prepare the seasoning to the sambar or soup. For that heat a small pan and add in oil, mustard seeds, curry leaves, red chilies, crushed garlic.
- Add in the prepared seasoning to the boiling soup or sambar. Finally the healthy and tasty Horse Gram Sambar is ready to serve.

- Bowl for soaking
- Pressure cooker or Pot
- Pot
- Mixer jar
- Strainer
- Seasoning pan
- 200 grams Horse gram
- Salt to taste
- 3 cup Water (Adjust as per requirements)
For Grinding
- 1 Small onion
- 6 to 7 Garlic
- 6 nos Pepper corns
- 1 tsp Cumin seeds
- ¼ cup Coconut
- ½ tsp Tamarind
- 2 tsp Sambar power
- Pinch of turmeric powder
For Seasoning
- 1 tbsp Oil
- ¼ tsp Mustard seeds
- 2 spring Curry leaves
- 4 Crushed garlic
- Pinch of hing
- 2 Red chilies
