Ingredients
Fresh Karamani, onion, coconut, sambar powder, tamarind, brinjal, potato, a few curry leaves, water, salt to taste, and oil.
Methods:
- Firstly, heat a pan and add water, and fresh karamani. Then close the lid and allow it to cook.
- once the karamani is 70 percent cooked, then add in cut potatoes, and brinjal and allow it to cook.
- For preparing masala: Firstly, heat a pan and add in one cut onion. Fry till brown.
- Take a mixer jar and add in fried onions, coconut, tamarind, and sambar powder. Grind it into a smooth paste.
- Add in the ground masala paste. Then give a mix and allow it to cook till the raw smell goes away completely.
- Give a mix, add salt to taste, and allow it to boil.
- For seasoning, heat a small pan and add in oil, mustard seeds, onion, a few curry leaves, and hing. Sauté for 2 to 3 minutes.
- Now add the prepared seasoning to the boiling sambar. And boil for 3 to 5 minutes.
- Finally Fresh Karamani Sambar is ready to serve.

- Mixer jar
- Small Pan
- 200 grams Gresh Karamani
- 3 cups Water
- 1 Potato
- 1 Brinjal
- Salt to taste
- Coriander leaves chopped for garnishing
For Seasoning
- 2 tbsp Oil
- 1 Small Onion
- Few Curry leaves
- ½ tsp Mustard seeds
- Pinch of hing
For Grinding
- 1 Big Onion
- ⅓ cup Coconut cut
- ½ tsp Tamarind
- 1 tbsp Sambar powder
