Vegetable Pulao or Veg Pulao
Vegetable Pulao or Veg Pulao is a healthy and simple one pot rice recipe. It goes well with any raita of your choice, gravy, chutney.
- Pan
- Mixer jar
- 3 tbsp Oil or ghee
- 4 Cloves
- 2 Cardamom
- 1 inch Cinnamon
- ½ tsp Fennel seeds
- 1 Bay leaf
- 1 Star anise
- 1 big Onion
- 1 tsp Ginger garlic paste
- 1 Cup Jeera samba rice or basmati rice
- 4 cups Coconut milk
- ¼ cup Mint leaf and coriander leaves
- 4 Green chilies
- ¼ tsp Garam masala
- Water if required
- Salt to taste

Firstly heat a pan and add in oil or ghee. Then add in all the spices, onions and fry till transparent.

Then add in ginger garlic paste and saute till raw smell goes away.

Now take a mixer jar and add in mint leaf, coriander leaf, green chilies. Ground them into smooth paste.

Later add in cut vegetable and saute for 5 minutes. Then add in garam masala and grounded paste. Give a mi and saute it for 2 to 3 minutes in low flame.

Then add in rice, coconut water and salt to taste. Then close the lid and cook till the rice cooks completely.

Finally the vegetable puloa or veg pulao is ready to serve.
