Coconut milk rice or coconut milk pilaf, pulav – pulao is a flavorful and simple one pot dish made using coconut milk, rice and some spices. It is one of the most popular among South Indian Cuisine. This coconut milk rice is one of my go to recipe, as it is easy to prepare and tasty too.
ABOUT COCONUT MILK RICE
Further, it is prepared by using fragrant rice like basmati rice or jeera samba rice or sona masori rise, aromatic spices like cloves, cinnamon sticks, star anise and cardamom which gives a nice flavor to the dish. And of course, the main hero of the dish coconut milk gives a creamy texture and flavor to the dish. When it comes to coconut milk you can use store bought full fat coconut milk or Home made coconut milk both thick and thin milk to this dish.
Coconut milk rice is also called as Thengai Paal Sadam in Tamil and Thengenakai anna or kayi haalina anna in Kannnada.
This coconut milk rice can be served as a meal or even for breakfast. It can be served with any thick gravy, kurma or raita. Usually, I like to serve with rajma masala, vegetable kurma, nilgiri vegetable kurma or chicken curry. What’s your favorite combination…..comment below.

Ingredients
Oil or Ghee 1/4 cup
Fennel seeds 1 tsp
Cloves 4 to 6
Cinnamon 2 inch
Cardamom 2
Mace 1
Star anise 1
Bay leaf 2
Big Onion 1 chopped
Green chilies 4 to 6
Cashew nuts (optional) 10 to 12
Ginger and garlic paste 2 tbsp.
Mint leaves 1/4 cup
Coriander leaves 1/4 cup
Double beans or green peas 1/2 cup
Rice 2 cups
Coconut milk 4 1/2 cups
Salt to taste
Directions
- Firstly, heat a pan and add in oil or ghee, bay leaf, fennel seeds, cloves, mace or Japathri, cardamom, and cinnamon.
- Add green chilies as per your spice level.
- 10 to 12 Cashew nuts (optional).
- 1 big onion chopped, sauté till the onions are translucent. Salt to taste.
- 1/2 cup double beans or even you can add green peas.
- 2 tbsp. ginger garlic paste.
- 1/4 cup chopped mint and coriander leaves.
- Later add in coconut milk.
- Close the lid and allow it to boil.
- Then add in soaked jeera samba rice or basmati rice of your choice.
- Again add some chopped mint and coriander leaves (optional).
- Add 1 to 2 tbsp. ghee. Then give a mix.
- Further, close the lid and allow it to cook, under a low flame.
- Give a mix in between.
- Finally, healthy and tasty coconut milk rice is ready to serve.
