Carrot chutney is a flavorful and nutritious condiment that is commonly made in South India. It is typically served as a side dish to complement dishes like idli, dosa, roti, chapati or even with rice.

Ingredients

  • 1 tsp. Oil

  • 2 tbsp. Chana dal

  • 1 tbsp. Urad dal

  • 1 Medium Onion

  • 1 Carrot

  • 1/4 cup Coconut

  • 3 Red Chilies

  • Salt to taste

  • Few Curry leaves

  • Little Tamarind

  • 4 Garlic pods

  • 1/4 cup Water

  • For Seasoning
  • 1 tbsp. Oil

  • 1 tsp Urad dal

  • 1/2 tsp Mustard seeds

  • Few Curry leaves

Directions

  • Firstly, heat a pan and add in oil, 1 tbsp. chana dal, urad dal. Sauté till it slightly changes its color.
  • Then add in cut onions, carrots, few curry leaves and fresh coconut. Sauté till the carrots changes its color or till the raw smell goes away.
  • Later add in red chilies, garlic pods. Sauté for 2 minutes in low flame.
  • Add Little tamarind.
  • Transfer to a mixer jar and add salt to taste. Further, grind it into a smooth paste.
  • For seasoning, heat a same pan and add in oil, mustard seeds, urad dal and few curry leaves.
  • Add the seasoning to the ground chutney.
  • Finally, Carrot Chutney is ready to serve.

Notes

  • You can make many variations like we can add roasted peanuts, adding onions is optional, even we can add green chilies instead of red chilies.

How to make Carrot Chutney:
