Ash gourd halwa is also known as Kashi Halwa or kasi halwa.  This gourd is also called as kushmanda, kumbalakai, gummadikaya, winter melon, poosanikai, dumroot . It has a very light and smooth texture and just melts in your mouth.

 

Ingredients:

Ash gourd grated, sugar, cardamom powder, cashew nuts, raisins, ghee.

 

Methods:

How to make Ash Gourd Halwa:

  • Firstly, heat a pan and add in grated ash gourds, saute till the water evaporates completely.
  • Close the lid and allow it to cook the ash gourd till the raw smell goes away.
  • Once the ash gourd is completely cooked and slightly changes its color. Then add in sugar as per requirement.
  • Give a mix and allow it to cook.
  • Heat a small pan and add in oil or ghee, few cashew nuts, raisins. Fry till golden brown.
  • Then add in tbsp of ghee.
  • Saute till the ash gourd halwa starts releasing the pan.
  • Add in cardamom powder and give a mix.
  • Finally add in fried cashew nuts, raisins and give a mix.
