It is a healthy and delicious, tasty sambar recipe. We can add any vegetables of your choice for example in this sambar I have added the following vegetables like:( beans, radish, carrot, brinjal, potato). Adding freshly ground sambar powder gives extra taste and aroma to the this dish. Furthermore rice is the staple food of South Indians and it goes well with this dish.

 

SAMBAR:

Sambar is a dal based vegetable stew, cooked with Toor dal (pigeon pea) and tamarind paste. It is very popular dish in South Indian Cuisines. The texture and taste differs from one place to another such as Arachuvitta Sambar Recipe, Udupi Sambar, Mysore sambar, Kerala Style Sambar, Tamil Nadu Style Sambar, Karnataka Style Sambar, Brahmin Sambar, Butter Milk Sambar, Idli Sambar, Mangalore Smabar etc., They are traditionally accompanied with rice and a variety of side dishes or papads. Sambar can be made without adding vegetables too. Even it tastes great like Pappu Saaru, Tomato Pappu.

 

Ingredients:

Toor dal, Masoor dal (optional), turmeric powder, onion, tomatoes, few curry leaves, beans, carrot, radish, brinjal, potato, tamarind juice, jaggery, salt to taste, water as required, sambar powder, red chili powder, oil, mustard seeds, cumin seeds.

 

For making sambar powder: chana dal, urad dal, coriander seeds, cumin seeds, dry red chilis, cinnamon sticks, fenugreek seeds, pinch of hing.

 

Methods:

How to make Andhra Style Sambar Recipe:

  • Firstly, rinse dal for 2 to 3 times and then soak for 30 minutes. Now heat a pan and add in 3 cups of water, dal, onion, few curry leaves, turmeric powder, little oil, salt.
  • Then allow the dal to cook completely. And then keep it aside.
  • For making sambar powder: heat a pan and add in oil, chana dal, urad dal, coriander seeds, curry leaves, red chilies, cumin seeds, cinnamon, fenugreek seeds, hing. Roast till the dals slightly changes its color.
  • Allow it to cool down completely.
  • Transfer it to mixer jar, along with that add in 8 to 10 garlics.
  • Ground it into a smooth powder.
  • Now heat a pan and add in oil, mustard seeds, cumin seeds, onion, few curry leaves, red chili, turmeric powder, salt.
  • Saute till the onions becomes brown. Then add in vegetables. Give a mix.
  • Close the lid and allow it to cook for 5 minutes, if required add little water.
  • Then add in chopped tomatoes. Cook till the tomatoes becomes soft.
  • Later add in tamarind juice.
  • Add in sambar powder. Give a mix. Add in red chili powder. Add 1/2 cup water.
  • Further add in cooked dal. give a mix.
  • Allow it to cook for another 5 minutes.
  • Add required water and allow it to boil the sambar.
  • Finally, the Andhra Style Sambar is ready to serve.

Pulusu is a tamarind based curry or sambar, on the other hand sambar is a dal and vegetable based dish.
How can I thicken my sambar?
We can add thick coconut milk, it makes the dish thick and tasty. Or even we can add cooked and mashed dal for thickness.
Why jaggery is added to sambar?
Adding a bit of jaggery enhances the taste of sambar, at the sometime balances the taste of the sambar. 
Do we add sugar in sambar?
In my personal opinion is always better to add jaggery than sugar. Adding jaggery gives the dish some sweetness, tastes great.
What is the best side dish for sambar?

  • Large deep pan
  • Small Pan
  • Mixer jar
  • ½ cup Toor dal
  • ¼ cup Masoor dal
  • ⅛ tsp Turmeric powder
  • 1 Onion
  • 2 Tomatoes
  • Few Curry leaves
  • 10 Beans
  • 1 Carrot
  • 1 Brinjal
  • 1 Potato
  • 2 tbsp Tamarind juice
  • ½ tsp Jaggery
  • Salt to taste
  • Water as required
  • 3 tbsp Sambar powder
  • ½ tsp Red chili powder

For Making Sambar Powder

  • 2 tbsp Chana dal
  • 2 tbsp Urad dal
  • 2 tbsp Coriander seeds
  • 1 tbsp Cumin seeds
  • Few curry leaves
  • 8 Dry red chilies
  • 2 inch Cinnamon stick
  • ½ tsp Fenugreek seeds
  • Pinch of high

For Seasoning

  • 2 tbsp Oil
  • 1 tsp Mustard seeds
  • ½ tsp Cumin seeds
  • 1 Onion sliced
  • Few Curry leaves
