Ingredients

  • 3 to 4 Beetroots chopped

  • 1 Big Onion chopped

  • 2 tbsp. Oil

  • 1/2 tsp Mustard seeds

  • 1/2 tsp Cumin seeds

  • 1 tsp Chana dal

  • 1 tsp Urad dal

  • 2 Green Chilies

  • 1/4 tsp Turmeric powder

  • 1/2 tsp Sambar powder

  • 1/4 tsp Red chili powder

  • Curry leaves

  • Salt to taste

  • 1/2 cup Water

  • For Grinding
  • 1/2 Fresh Coconut

  • 1/2 inch Ginger

  • 5 Garlic pods

Directions

  • Firstly, take a mixer jar and add in fresh coconut, ginger and garlic. Grind it into a coarse mixture and keep it aside.
  • Then heat a pan and add in oil, mustard seeds, cumin seeds, chana dal, urad dal. Sauté till light golden brown.
  • Later add in chopped onions, green chilies, curry leaves and a pinch of turmeric powder. Give a mix.
  • And then add in chopped tomatoes and salt to taste.
  • Add in red chili powder and sambar powder. Give a mix.
  • Further, add in coarsely grind coconut mix.
  • Add chopped beetroot, little water and give a mix. Then close the lid and allow it cook till the beetroot is completely cooked.
  • Finally, tasty and healthy Andhra Style Beetroot fry is ready to serve.
