UNNI APPAM OR UNNIYAPPAM
It is also known as Karollappam. It is one of the traditional and popular snack in Kerala. In Malayalam Unni means small and appam means rice cake. Unni appam is a small round snack made from soaked rice, jaggery, ripe banana, roasted coconut pieces, ghee or oil, cardamom pods. Instead of banana we can use jackfruit too. If required we can add roasted sesame seeds and poppy seeds.
So, if there is any ripe bananas left over at home and wondering what to do, So don’t worry just make this delicious and traditional wheat appam with leftover ripe bananas.
Unniyappam Pan:
There are variety of pan available in market or in online like, Cast iron, Non stick, Iron, Brass, Aluminium. I prefer using Iron or Cast iron pans, as it is healthy and reasonable too.

Yes we can make unni appam using idli mold or even we can deep fry them in oil or ghee too.

Instead of using soaked rice we can directly use rice flour for making instant unni appam.
Why does unniyappam become hard?
If the batter is not properly fermented then it becomes hard and rough. And consistency of the batter is also important, because thick batter makes it hard.

- Mixing bowl
- Appam pan
- Mixer
- 1 cup Rice
- ¼ cup Water
- ½ cup Jaggery
- ½ cup Coconut pieces
- 3 Cardamom
- 1 Ripe Banana
- Oil or Ghee
- ⅓ cup Cut Coconut (Frying)

Firstly rinse rice 2 to 3 times and then soak for 3 to 5 hours. Strain it completely.

Heat a pan and add in little water and jaggery.

Melt jaggery completely and allow it to boil for another 2 to 3 minutes.

Take a mixer jar and add in soaked rice, and coconut pieces.

Add in cardamom pods. Coarsely ground rice.

Strain the prepared jaggery syrup.

Further, add in a banana. Grind it into a smooth batter.

Ground smooth paste.

Transfer it to another bowl and close the lid. Allow it to rest for 2 to 3 hours.

Heat a small pan and add oil or ghee, and cut coconuts. Fry till the coconuts become golden brown.

Further add to the prepared batter. Then give a mix.

Heat an appam pan, and add oil or ghee generously.

Pour the prepared appam batter. Allow it to cook on low flame. Cook on both sides.

Finally, Unni Appam is ready to serve.
