SRI LANKAN WINTER MELON CURRY OR ALU PUHUL CURRY

Sri Lankan winter melon curry  is a healthy and tasty, creamy curry recipe. Coconut milk enhances the taste of the curry. Winter melon is also called as ash gourd. So, the ingredients used in this recipe are Ash gourd, coconut milk, green chilies, onion, curry leaves, bay leaf, tumeric powder, curry powder(optional), fenugreek seeds, cinnamon stick, salt to taste. For grinding we need, garlic, black pepper corn, grated coconuts.

HOW TO MAKE SRI LANKAN WINTER MELON CURRY OR ALU PUHUL CURRY

Firstly remove the skin of winter melon and cut them into cubes and keep it aside.

For grinding: take a mixer jar and add in pepper corns, garlic cloves and grated coconuts.

Heat a pan and add in oil, fenugreek seeds, sliced onions, green chilies,,curry leaves, cinnamon sticks, bay leaf and hing.

Add in cut winter melon and coconut milk.

Add in turmeric powder and salt to taste.

Add in ground paste and curry powder(optional) and cook for another 3 to 5 minutes in low flame.

  • Pan
  • Mixer grinder
  • 250 grams Ash gourd or winter melon
  • 1 tbsp Oil
  • ¼ tsp Fenugreek seeds
  • 1 small Onion
  • 2 Green Chilies
  • Few Curry leaves
  • 2 inch Cinnamon stick
  • 1 Bay leaf
  • Pinch of hing
  • ½ cup Coconut milk
  • ⅛ tsp Turmeric powder
  • Salt to taste

For Grinding

  • 2 tbsp Grated coconut
  • 1 tsp Pepper corns
  • 2 Garlic cloves

  6. Add in the ground paste and curry powder(optional) and cook for another 3 to 5 minutes on low flame.

  7. Finally, Sri Lankan Winter melon curry is ready to serve.
