Spinach rice bath or Palak rice bath is a healthy rice recipe and one of the best lunch box recipe. Spinach is a leafy green vegetable, as it’s loaded with nutrients. So, the ingredients used in this recipe are fresh palak or spinach, onions, tomatoes, ginger, garlic, cloves, cardamom, bay leaf, fennel seeds, cumin seeds, turmeric powder, hing, cashew nuts, kasuri methi (i.e., dry fenugreek leaves), ghee, oil, green chilies, freshly grated coconut, garam masala powder, salt to taste, water as required, jeera samba rice, fresh toor beans, fresh avarekalu or we can add fresh green peas.
Palak rice bath goes well with onion raita, kurma, or any gravies of your choice.

Palak Rice bath or Spinach Rice bath
Palak Rice bath or Spinach rice bath is a healthy and simple rice recipe. It is one of the healtiest lunch box recipe.
- Large bottom pan
- Mixer grinder
Grinding
- 100 Grams Spinach or Palak
- 1 Medium Onion
- ⅓ cup Grated fresh coconut
- 7 pods Garlic
- 1 inch Ginger
Cooking Rice bath
- 2 tbsp Oil
- 1 Bay leaf
- 2 Cloves
- 1 inch Cinnamon
- 2 Cardamom
- ¼ tsp Cumin and fennel seeds
- 4 Green Chilies
- 10 Crushed Garlic
- 1 Chopped Onion
- Pinch of Turmeric powder
- 1 Chopped Tomato
- ½ cup Fresh Toor beans or Green Peas or Fresh Avarekalu
- ½ tsp Garam Masala
- 2 cups Jeera Samba Rice or Basmati rice
- 1 tbsp Kasuri methi
- 1 tbsp Ghee
- 3 cups Water
- Salt as required
- 2 tbsp Fried Cashew nuts
- Pinch of hing
Soak Jeera Samba rice in water for 20 minutes.
Heat a pan and add in little oil, onion, garlic, ginger,fresh grated coconut and cleaned palak or spinach. Close the lid and cook for 3 minutes in low flame.
Take a mixer jar and add in all the cooked above spinach or palak mix. Grind them into a paste and keep it aside.
Heat a large pan and add in oil, cumin seeds, fennel seeds,bay leaf, cloves, cinnamon sticks, cardamom, green chilies, crushed garlic, chopped onions, chopped onions, pinch of turmeric powder. Cook for 2 minutes in low flame.
Now add in fresh toor beans or green peas or fresh Avarekai (of your choice). Give a mix.
Then add in spinach paste and cook till the raw smell goes.
Add in garam masala, soaked rice, salt to taste, required water and finally add ghee.
Close the lid and cook for 25 to 30 minutes in low flame.
Finally garnish it with some fried cashew nuts and serve hot with any raita or gravy of your choice.
