Nuchinude or Lentil Dumplings

Nuchinunde or lentil dumplings is a healthy and traditional recipe, it goes well with ash gourd majjige huli or ladies finger majjige huli or any majjige huli of your choice, chutney. So, the ingredients used in this recipe are soaked chana dal, toor dal, moondal, chopped onions, green chilies, leafy vegetables like dill leaves, danttu soopu, coriander leaves, curry leaves, cumin seeds, pepper corns, grated coconuts, turmeric powder, hing, salt to taste, oil, water as required.

Hing Oil or Asafoetida oil is traditonally served with nuchinunde. It helps in digestion.

How to make Nuchinunde, lentils dumplings recipe:

Nuchinude
Soak chana dal, toor dal, moong dal for 2 hours.

Strain off the excess water.

Take a mixer jar and add in curry leaves, green chili, coriander leaves, cumin seeds, pepper corns.

 

Add in little soaked dals.

Ground them coarse paste. Repeat the same for the next batch of soaked lentils.

Take a large bowl and add in ground paste, chopped onions, grated coconuts, turmeric powder, hing, green leafy vegetable like dill leaves, fenugreek leaves etc., salt to taste.

Give a mix to form a shape.

Grease idli plate with little oil and make round shape or oval shape dumplings.

Firstly heat water in idly cooker and then place idly stand filled with dumplings. And then allow it steam cook for 10 minutes in high flame and 5 minutes in low flame.

 

For making hing oil, we need to heat a pan and add in oil, and hing, then switch off the oil.

Nuchinande or Lentils dumplings

Nuchinunde or lentil dumplings is a healthy and traditional recipe, it goes well with ash gourd or ladies finger majjige huli or any majjige huli of your choice, chutney.

  • Mixer jar
  • Mixing bowl
  • Idli cooker

Soaking

  • ½ cup Chana dal
  • ½ cup Toor dal
  • ½ cup Moong dal

Grinding

  • 4 Green chilies (Adjust according to your spice level)
  • ¼ cup Coriander leaves
  • ½ tsp Cumin seeds
  • ½ tsp Pepper corns
  • Few curry leaves
  • Soaked dals

For Mixing

  • Ground dals
  • ½ cup Grated coconuts
  • 1 Chopped onions
  • ½ cup Any green leafy vegetables (Like dill leaves, fenugreek etc.)
  • Pinch of turmeric powder
  • Pinch of hing
  • Salt to taste
  • Oil (as required)
  1. Firstly soak chana dal, toor dal, moong dal for 2 hours.

  2. Take a mixer jar and add in coriander leaves, green chilies, cumin seeds, pepper corns, soaked dal, curry leaves.

  3. Ground them coarsely batch by batch.

  4. Take a mixing bowl and add in coarsely ground dal, chopped onions, chopped leafy vegetables, hing, turmeric powder, grated coconuts and salt to taste.

  5. Make small ball shape, oval shape dumplings.

  6. Steam them in idli cooker for 15 minutes in high flame and 5 minutes in low flame.

  7. Finally Nuchinunde is ready to serve with ash gourd or ladies finger thumbuli and hing oil.
