Ingredients
Large green chilies (Bajji chilies) 10 nos.
Besan (gram flour) 2 cups
Rice flour 2 tbsp.
Red chili powder 2 tbsp.
Coriander powder 1 tsp.
Turmeric powder 1/4 tsp.
Ajwain 1/4 tsp.
Baking soda 1/4 tsp. (optional)
Salt to taste
Oil for deep frying
Water as required
- For stuffing
Chopped onion 1
Chopped coriander leaves 1 tbsp.
Cumin powder 1/4 tsp
Red chili powder 1/4 tsp
Chat masala 1/4 tsp
Salt to taste
Directions
- Firstly, slit the chili lengthwise, remove the seeds to reduce the heat and then keep it aside.
- For filling, In a bowl add chopped onions, coriander leaves, red chili powder, chat masala, cumin powder, salt to taste. Give a mix and keep it aside.
- Preparing batter: In a bowl, add in 2 cups besan flour, 2 tbsp. rice flour, 2 tbsp. red chili powder and 1 tsp coriander powder (optional), 1/4 tsp turmeric powder, 1/4 tsp ajwain, 1/4 tsp baking soda, salt to taste. Adjust the spice as per your preference. And then give a mix.
- Add required water to form a smooth, lump free batter and give a mix.
- The consistency should be thick enough to coat the chilies.
- Dip each chilies into the prepared batter. Ensuring it well coated.
- Carefully drop the coated chilies into hot oil for deep frying.
- Fry until they turn golden brown and crispy.
- Remove the bajjies from the oils and place them on the absorbent paper to drain off the excess oil.
- Now slit the mirchi bajji and then fill it with prepared stuffing.
- Finally, stuffed mirchi bajji is ready to serve with any chutney, sauce of your choice.
