LADIES FINGER FRY ANDHRA STYLE

It is a simple and spicy fry recipe, can be prepared with less ingredients. It  can be served as an accomplishment with sambar rice, rasam sadam, chapati.

Ladies finger is also called as Okra, Ventaikkay (Tamil), Bhindee (Hindi), Benda Kaya (Telugu), Ventakka (Malayalam), Bendekayi (Kannada), Dhemrasa (Bengali), Bhidi (Punjabi), Bhendi (Marathi). It is called Ladies finger because of the shape which resembles the fingers of a women. 

How do you remove the stickiness out of Ladies finger?

Before cooking firstly rinse the ladies finger for 2 to 3 times and then pat and dry, then we can use it for cooking.

Secondly a tbsp of oil before stir frying or sautéing bhindi.

One more tip is to add a tsp of curd and then stir fry it. So, the bhindi will be non sticky.

Oil, Mustard seeds, crushed Garlic, Red chilies, Chana dal, Urad dal, Onions, Turmeric powder, Curry leaves, Salt to taste, Hing, Tomato, Ladies finger chopped.

It is also known as ‘Kumkum Bhindi’. There is not much between green bhindi, flavors are same other than color.

Can you cook lady finger in cast iron?

Yes, firstly heat a pan and add in little oil, further add in cut ladies finger. Stir fry till the stickiness completely goes away. Add in other ingredients and transfer it to another bowl or plate.

Should okra be soaked before cooking?

No, just rinse for 2 to 3 times and cut them into pieces. Its ready to cook.

How long should you fry okra

It may take 8 to 10 minutes under medium flame.

Do you cover okra when frying

Usually, I don’t cover led while frying or cooking ladies finger. Because when covering a dish while cooking forms steam and moisture, as a result wetness equals slimy ladies fingers. So, it is better to avoid covering while cooking okra.

Can ladies finger be eaten raw

Usually it is not eaten raw, instead we can stir fry and sprinkle some spice. And its ready to eat.

HOW TO MAKE LADIES FINGER FRY ANDHRA STYLE:

Heat a pan and add in oil, mustard seeds, crushed garlic, red chilies, chana dal, urad dal, onions, turmeric powder, curry leaves, salt to taste, hing. Sauté for 2 minutes in low flame.

Add in chopped tomato. Cook till the tomatoes becomes soft.
Add in cleaned and chopped ladies finger and give a mix. Then allow it to cook till the stickiness goes away completely or until the bhindi is cooked.

Finally, the Ladies Finger Fry is ready to serve.

  • Pan
  • 500 grams Ladies Finger
  • 2 tbsp Oil
  • ½ tsp Mustard seeds
  • 1 tsp Chana dal
  • 1 tsp Urad dal
  • 5 to 6 Crushed garlic
  • 1 Chopped Onion
  • 1 Chopped Tomato
  • Few Curry leaves
  • ¼ tsp Turmeric powder
  • Pinch of hing
  • 2 to 3 Red chilies
  • Chili powder or samber powder (as per requirements)
  • Salt to taste
  1. Heat a pan and add in oil, mustard seeds, crushed garlic, red chilies, chana dal, urad dal, onions, turmeric powder, curry leaves, salt to taste, hing. Sauté for 2 minutes in low flame. 

  2. Add in chopped tomato. Cook till the tomatoes becomes soft.

  3. Add in cleaned and chopped ladies finger and give a mix. Then allow it to cook till the stickiness goes away completely or until the bhindi is cooked.

  4. Finally, the Ladies Finger Fry is ready to serve.
