The key to the distinctive flavor of bisi bele bath lies in the spice blend, which typically includes ingredients like tamarind, coconut, curry leaves, cinnamon, cloves, cardamom, coriander seeds, fenugreek seeds, and red chilies. This spice blend is roasted and ground to make a masala powder, which is then added to the dish along with cooked rice, lentils, and vegetables.
