IDLI PODI OR MILAGAI PODI

MILAGAI PODI is a course spice powder. It is a combination of ground dry spices which contains dried chillis, urad dal, channa dal, sesame seeds, pepper, fenugreek seeds, tamarind, peanuts, curry leaves, garlic, salt to taste, oil. This spice mix is commonly known as chutney powder. It is usually served with gingelly oil or melted ghee along with idly, dosa, rice, roti etc.,

HOW TO MAKE IDLI PODI | MILAGAI PODI

Heat a pan and add in little oil and chana dal and fry till it turns golden brown.

Then add in urad dal and fry till golden brown or slightly changes its color.

Roasted urad dal.

Now add in peanuts and fry till it slightly changes its color.

Later dry fry garlic.

Now fry curry leaves.

Add in little oil and fry dry red chilies.

Further roast kashmiri red chili.

And then add in pepper, fenugreek seeds and sesame seeds and fry till it slightly changes its color.

Fry tamarind for one minutes in low flame.

Allow it cool down completely.

Firstly ground dry chilies.

Now ground the remaining ingredients along with chilies and required salt.

Ground them coarsely or fine powder according to your choice.

Allow it cool down completely and store them in air tight container.

Finally Idli podi or Chutney podi is ready to serve.

 

Idli Podi or Chutney Podi

Idli Podi or Chutney podi or gun powder is a combination of ground dals and spices, it goes well with idli, dosa and rice.

  • Pan
  • Mixer jar
  • 1 tbsp Oil
  • ½ cup Split chana dal
  • 1 cup Urad dal
  • 2 spring Curry leaves
  • 20 Dry Chilies
  • 5 Kashmiri Chili
  • Salt as per taste
  • Tamarind small lemon size
  • 12 cloves Garlic
  • 15 Pepper
  • 2 tsp Sesame seeds(white)
  • ¼ cup Peanuts
  1. Heat a pan and add in little oil, chana dal, fry till golden brown.

  2. Then add in urad dal and fry slightly changes its color.

  3. Now fry peanuts, garlic, curry leaves.

  4. Then add in little oil and fry dry chilies, kashmiri chilies and keep it aside.

  5. Now fry fenugreek seeds, sesame seeds, pepper corns and keep it aside.

  6. Fry tamarind for 1 minute in low flame and keep it aside.

  7. Transfer all the fried ingredients into a bowl or plate and allow it to cool completely.

  8. Now ground all the ingredients into coarsely powder or smooth powder according to your choice.

  9. Finally idli podi or chutney podi is ready to serve with idli or dosa of your choice.

  10. Store them in air tight container.
