Thandai is a magical drink because the ingredients used in this recipe are milk, and nuts like almonds, cashew nuts, pistachio, fennel seeds, watermelon kernels, rose petals, pepper, poppy seeds, cardamom, poppy seeds, saffron (optional), milk and sugar. Adding nuts not only gives a creamy texture but also a rich, nutty flavor to the Thandai.

Cardamom adds flavor and sweet, whereas pepper gives a hint of heat and spiciness. Adding kesar or saffron gives a richness and color to the drink, poppy seeds for cooling. Directions

  • Firstly, in a bowl add in almonds, cashews, raisins, melon seeds, pumpkin seeds, dates, fennel seeds, pepper corns, poppy seeds, rose petals.
  • Then add in water and allow it to soak for few hours or over night.
  • Later transfer to a grinder. Grind it into a smooth paste.
  • Boil milk and set it aside to cool down completely, strain milk.
  • Add in sugar for sweetener.
  • Now its time to add prepared thandai masala paste.
  • Give a mix without any lumps.
  • Finally, garnish it with rose petals and chopped dry fruits. Now Holi special Thandai is ready to serve.
