Mint Vegetable rice is a healthy and super tasty rice recipe, it can be served with any raita of your choice, or with some gravy. I usually preferred to have it with onion raita. As I said it is a healthy rice recipe, as it contains different types of vegetables, spices. So, the ingredients used in this recipe are beans, carrots, cauliflowers, green peas, freshly chopped onion, freshly chopped tomatoes, ginger garlic paste, freshly chopped coconuts, mint leaves, coriander leaves, cloves, cinnamon sticks, cardamom, bay leaf, fennel seeds, oil, basmati rice, chili powder (optional), coriander powder, biryani powder, green chilies, lemon, ghee, salt as per taste, water as required.
There are different types of biryani recipes, like vegetable biryani, hariyali biryani, dum biryani, hyderabadi biryani, keema biryani, mushroom biryani, paneer biryani, Soya biryani, prawns biryani, fish biryani, mint biryani, potato biryani, vegetable dum biryani, egg biryani, chicken biryani, mutton biryani, egg dum biryani, chicken dum biryani, mutton dum biryani and so on the list goes on. It can be served with onion raita, tomato raita, cucumber raita.
We can use any vegetable of your choice, I usually use fresh green peas, beans, carrots, cauliflowers, sometimes I like to add chopped potatoes too. Some may use capsicum, chow chow, fresh peanuts, soya junks, roasted breads. So, the vegetable biryani is a healthy and tasty recipe. It can be prepared for breakfast, or for lunch and even for dinner too.

Healthy Mint Vegetable Biryani
Mint Vegetable biryani is a helathy and tasty biryani recipe, it goes well with onion raita or any raita of your choice.
- 3 cups Basmati rice
- ½ cup Freshly chopped beans
- ½ cup Freshly chopped carrots
- ½ cup Green peas
- ½ cup Freshly cut Cauliflowers
- 2 Chopped Onion
- 3 Chopped Tomatoes
- 4 Cloves
- 2 Cinnamon Stick
- 3 Cardamom
- ¼ tsp Fennel seeds
- 2 Bay leaf
- 1 or 2 Star Asin
- 1 tsp Coriander Powder
- ⅛ tsp Turmeric Powder
- 2 tbsp Oil
- Salt (As per taste)
- 4½ cup Water
For Grinding
- 1 cup Mint leaves
- ½ cup Chopped Coconuts
- ½ cup Coriander leaves
- 1 inch Ginger
- 2 tbsp Garlic cloves
Soak Basmati rice for 3o minutes.
Add in oil, all the spices, chopped onion, chopped tomatoes, chilies. Cook till the raw smell goes.
Add in all the freshly chopped veggies. Fry for 3 minutes in low flame.
Take a mixer jar and add in chopped coconuts, ginger garlic, mint leaves, coriander leaves. Make a paste of it.
Add in the grounded paste, water as required and close the lid and cook for 3 to 5 minutes in low flame.
Add in the soaked rice, salt as per taste, ghee and squeeze lemon juice. Give a mix. Cook till the rice cooks.
Now the healthy mint vegetable rice is ready to serve with onion raita.
- Add in the fried cashew nuts to enhance the taste of the biryani.
- Instead of water we can add coconut water to enhance the taste of the biryani.
