Healthy Chickpea Vegetable Salad is the packed with nutrients. It can be served has a breakfast or even for snacks. Ingredients used in this salad are soaked and cooked chickpea, freshly grated coconuts, freshly grated carrots, freshly chopped coriander leaves, freshly chopped cucumber, salt to taste, little chili powder, freshly chopped onion. Chickpeas are usually rapidly boiled for 10 minutes and then simmered for a longer period. Dried chickpea need a long cooking time, so to avoid longer cooking time, it is better to soak at least for 4 to 8 hours before use, by this cooking time can be shortened. I usually soak the chickpea for at least 4 hours or overnight and pressure cook for 4 whistle.

Healthy Chickpea Vegetable Salad
Chickpea Vegetable Salad is a healthy and tasty recipe, it is packed with nutrients. Try and enjoy the salad as a breakfast or as a evening snacks.
- 1 cup Soaked and boiled chickpea
- ¼ cup Grated Carrot
- 1 Chopped Onion
- 1 cup Chopped Cucumber
- 1 tbsp Grated Coconut
- Chopped Coriander leaves
- Salt (As per taste)
- Chili powder (Optional)
Firstly pressure cook(3 to 4 whistle) the soaked chickpea and keep it aside.
Take a large bowl and add in boiled chickpea, grated carrots.
Add in grated coconuts, chopped onion.
Add in chopped cucumber, chopped coriander leaves, Salt and chili powder.
Give a quick mix and serve.
