Curd is a diary product obtained by coagulating milk in a process called curdling. Summer is the best time to have curd in the form curd rice, butter milk, lassi. Curd rice is one of my all time favorite recipe. It helps in cooling the body. Adding tadka, pomegranate, cashew nuts enhances the taste of the curd rice. Some people like to add milk in curd rice, but I like to have it with curd itself.
Thick curd, rice, cashew nuts, curry leaves, grapes, oil, mustard seeds, urad dal, channa dal, coriander leaves, cumin seeds, grated ginger, carrot, salt to taste., pomegranate, cucumber, sugar.
Curd rice can be made in many variety by using different fruits and vegetables without cooking. It is one of my sons favorite dish. Curd rice is summer special dish.
Benefits of curd are healthy digestion, improves immunity, helps to lose weight, for healthy and radiant skin, removes dark spots.

Fruit Curd Rice (Summer Special)
Curd rice itself is a healthy recipe. To make it more healthy you can add fruits and vegetables such as grapes, pomegranate, apple, cucumber, onion, carrot and even you can add dry fruits aslo to make it more healthier.
- 2 Cups Cooked rice
- 1½ cup Curd
- ½ cup Green Grapes
- ¼ cup Pomegranate
- ¼ cup Cucumber
- ¼ cup Carrots
- 1 tbsp Coriander leaves
- ¼ tsp Mustard
- ½ tsp Channa dal and Urad dal
- 8 nos. Cashewnuts (Optional)
- 2 spring Curry leaves
- 1 nos. Chopped chili
- ¼ tsp Cumin seeds
- ¼ tsp Grated ginger
- 1 tsp Oil
- Salt (as per taste)
- 1 tsp Sugar (Optional)
Firstly keep it ready all the ingredients ready.
Take a pan and add in cooked rice, fruites, vegetable, coriander leaves,salt, sugar,seasonings and curds. Give a mix.
Healthy Curd rice is ready to serve with pickle of your choice.
