Cluster beans Paruppu Usili

Paruppu Usili or Cluster beans paruppu usili is a healthy and traditional side dish recipe. It is a steamed lentils and crumbled soft dal which is combined with vegetables like beans, cluster beans, banana flower, cabbage, carrot etc. So, the ingredients used in this recipe are fresh cluster beans, channa dal, dry red chilies, onions, curry leaves, oil, mustard seeds, turmeric powder, salt to taste, hing or asafoetida, grated coconuts, coriander leaves.

How to make Healthy Cluster Beans Paruppu Usili Recipe:

Firstly clean and cut cluster beans into small pieces and keep it aside.

Secondly wash and soak channa dal and dry red chilies for one hour.

Then heat a pan and add in oil, mustard seeds, chopped onions and curry leaves. Then saute a for a minute.

Now add in chopped cluster beans.

Add in required water.

Cook cluster beans until 80 percent and keep it aside.

Take a mixer jar and add in soaked dal, chilies, turmeric powder, salt to taste.

Ground them into coarse paste.

 

Now heat a pan and add in coarsely ground dal mix.

Cook till it becomes dry.

Now add in cooked cluster beans, hing and salt if required. And then give a mix and cook for another 3 minutes in low flame.

Finally garnish it with finely chopped coriander leaves and freshly grated coconuts.

Paruppu Usili or Cluster beans paruppu usili is a healthy and traditional side dish recipe. It is a steamed lentils and crumbled soft dal which is combined with vegetables like beans, cluster beans, banana flower, cabbage, carrot etc.

  • Mixer jar
  • Pan
  • 250 grams Fresh Cluster beans
  • 2 tbsp Channa dal
  • 3 Dry red chilies
  • Pinch of turmeric powder
  • 1 tbsp Oil
  • ⅛ tsp Mustard seeds
  • 1 Chopped Onions
  • Few curry leaves
  • Pinch of hing
  • Salt to taste
  • Water as required
  • Chopped coriander leaves (Garnishing)
  • 2 tbsp Grated coconuts
  1. Firstly wash, chop cluster beans and keep it aside.

  2. Then wash and soak channa dal, dry red chilies for one hour.

  3. Heat a pan and add in oil, Mustard seeds, chopped onions, curry leaves and chopped cluster beans and required water. Give a mix and cook till the cluster beans cooks 80 percent.

  4. Take a mixer jar and add in soaked dal, chilies, turmeric powder, salt to taste. Ground them into coarse paste.

  5. Now heat a pan and add in coarsely ground dal mix. Cook till it becomes dry.

  6. Now add in cooked cluster beans, hing and salt if required. And then give a mix and cook for another 3 minutes in low flame.

  7. Finally garnish it with finely chopped coriander leaves and freshly grated coconuts and serve with samber or rasam rice or your choice.
