BOTTLE GOURD KURMA RECIPE

 

Bottle gourd Kurma is a healthy and auromatic gravy recipe. It is a thick and creamy curry made with cashew nuts, spices, poppy seeds, spice powders, channa dal. This gravy goes well with poori, chapati, dosa, parathas, plain rice, jeera rice, coconut rice, ghee rice, peas pulao etc.

Bottle gourd is also known as Calabash, White flowered gourd, Lauki, Dudhi, Doodhi, Ghiya, Sorakkai and many other names. Bottle gourd is available in different shapes and sizes, it can be in round , small, huge and bottle shape. It can be grown over a meter long. Using Bottle gourd in gravies, side dishes, parathas, samber, juices.

BOTTLE GOURD KURMA RECIPE

Bottle gourd Kurma is a healthy and auromatic gravy recipe. It is a thick and creamy curry made with cashew nuts, spices, poppy seeds, spice powders, channa dal. This gravy goes well with poori, chapati, dosa, parathas, plain rice, jeera rice, coconut rice, ghee rice, peas pulao etc.

  • ½ kg. Bottle gourd
  • 2 nos. Potatoes
  • 1 nos. Brinjal (Optional)
  • ¾ cup Channa dal
  • 1 nos. Tomato
  • 1 tbsp Coriander and Till leaves
  • Salt (as per taste)

For Grinding

  • 1 tbsp Coriander powder
  • 1 tsp Chili powder
  • ¼ cup Coconut chopped
  • 1 nos. Onion
  • 1 tsp Roasted channa dal
  • ½ tsp Poppy seeds
  • 2 nos. Cloves, Cardomom
  • 1 inch Cinnamon Stick
  • 5 nos. Garlic cloves
  • ½ inch Ginger
  • 5 nos. Cashew nuts (Optional)

For Seasoning

  • 1 tbsp Oil
  • ½ tsp Mustard seeds
  • 1 nos. Onion
  • 2 spring Curry leaves
  1. Take a pot and add 4 cups of water and let it boil and add in Channa dal



  2. Then add in Bottle gourd, Potatoes. Close the lid and cook for 5 minutes.

  3. Take a mixer jar and add in Onion, Coconut chopped, Chili powder, Coriander powder, Roasted channa dal, Poppy seeds, Cloves, Cardomom, Cinnamon sticks, Ginger, Garlic. Make a paste of it.



  4. Later add in grounded paste.



  5. Further add in tomato and cook till the raw smell goes. Add in salt as per taste.



  6. For seasoning add in oil, mustard, onion, curry leaves.



  7. Add in the tadka to the gravy and cook for 2 minutes. Garnish is with coriander or till leaves. Now the gravy is ready to serve hot with poori, chapati, rice, dosa.



  1. You can also add cashew nuts while grinding for extra taste.
