Andhra Style Tondekai Palya | Ivy gourd Palya is also known as scarlet gourd, tindora in Hindi, coccinia grandis, kowai fruit, kovakkai in Tamil, dondakaaya in Telugu. Andhra Style Tondekai Palya | Ivy gourd Palya recipe goes well with chapati, sambar rice, it can be served as a side dish or a evening snack.
Ingredients:
Tondekai or Ivy gourd, onion, peanuts, oil, curry leaves, coconut, salt to taste, freshly chopped coriander leaves, water as required, turmeric powder, hing. For masala powder we need, red chilies, coriander seeds, cumin seeds, pepper corns, channa dal, few curry leaves.
Methods:

- Then heat a pan and add in oil, peanuts and fry till the peanuts becomes crisp or slightly changes its color.
- For Masala powder : In the same pan add in red chilies, few curry leaves, channa dal, coriander seeds, pepper corns, cumin seeds. Dry roast till it changes its color to golden brown.
- Transfer the dry roasted masala spices to the mixer jar. And ground it into a smooth powder.
- Now heat a pan and add in oil, mustard seeds, channa dal, urad dal. Saute till it changes to slightly golden brown.
- Now add in chopped onions, few curry leaves. Saute till the onions becomes soft.
- Later add in cut tondekai or ivy gourd, add little water. Then close the lid and cook till the ivy gourd is 90 percent cooked.
- Then add in grounded masala powder, grated coconut. Give a mix and cook for another 2 to 3 minutes in low flame. And then add in required salt to taste.
- At the end add in fried peanuts and give a mix.
- Finally garnish it with some chopped coriander leaves and serve hot with samber rice, chapati.

- 250 grams Fresh tondekai

- Pinch of hing
- Salt to taste
- Pinch of hing and turmeric powder

- 4 nos Red dry chilies
- 1 tbsp Channa dal
- ½ tsp Cumin seeds
- 2 tbsp Grated coconut (Dry or fresh)
