Spicy Brinji Rice recipe is a rich and traditional recipe. It is prepared with fresh coconut milk, fennel seeds, other spices, vegetables of your choice, jeera samba rice. It is one of the best lunch box recipe.
- Large bottom pan
- 1 cup Jeera samba rice
- 1 cup Coconut milk
- 4 Bay leaf
- 1 tsp Fennel seeds
- 1 Sliced onion
- 2 Sliced tomatoes
- 2 tsp Ginger garlic paste
- 3 Slice bread croutons
- 2 tsp Coriander leaves
- ½ tsp Garam masala
- ⅛ tsp Turmeric powder
- 1 tsp Fennel seeds
- 2 Cut carrots
- 6 Beans
- 1 cup Cauliflower
- ⅓ cup Green peas
- ¼ cup Mint leaves
- ¼ cup Coriander leaves
- 1 tbsp Ghee
- 2 tbsp Oil
- 2 cups Water

Firstly soak jeera samba rice for 15 minutes and keep it aside.

Heat a pan and add in oil, bay leaf, fennel seeds, sliced onions, ginger garlic paste and cook till the raw smell goes.

And then add in tomatoes, turmeric powder, coriander powder, garam masala, fennel powder and give a mix.

And then add in mint and coriander leaves.

Add in freshly cut vegetables like green peas, carrots, beans, cauliflower.

And then add in soaked rice and coconut milk.

And add in required water and salt to taste. And then close the lid and cook in low flame.

When the rice is 90 percent cooked then add in ghee, fried cashew nuts and bread croutons. And again close the lid and cook till the rice cooks.

Now the Spicy Brinji rice is ready to serve with raita, salna or any gravy of your choice.
