IDLI PODI OR MILAGAI PODI
MILAGAI PODI is a course spice powder. It is a combination of ground dry spices which contains dried chillis, urad dal, channa dal, sesame seeds, pepper, fenugreek seeds, tamarind, peanuts, curry leaves, garlic, salt to taste, oil. This spice mix is commonly known as chutney powder. It is usually served with gingelly oil or melted ghee along with idly, dosa, rice, roti etc.,

HOW TO MAKE IDLI PODI | MILAGAI PODI
Idli Podi or Chutney Podi
Idli Podi or Chutney podi or gun powder is a combination of ground dals and spices, it goes well with idli, dosa and rice.
- Pan
- Mixer jar
- 1 tbsp Oil
- ½ cup Split chana dal
- 1 cup Urad dal
- 2 spring Curry leaves
- 20 Dry Chilies
- 5 Kashmiri Chili
- Salt as per taste
- Tamarind small lemon size
- 12 cloves Garlic
- 15 Pepper
- 2 tsp Sesame seeds(white)
- ¼ cup Peanuts

Heat a pan and add in little oil, chana dal, fry till golden brown.

Then add in urad dal and fry slightly changes its color.

Now fry peanuts, garlic, curry leaves.

Then add in little oil and fry dry chilies, kashmiri chilies and keep it aside.

Now fry fenugreek seeds, sesame seeds, pepper corns and keep it aside.

Fry tamarind for 1 minute in low flame and keep it aside.

Transfer all the fried ingredients into a bowl or plate and allow it to cool completely.

Now ground all the ingredients into coarsely powder or smooth powder according to your choice.

Finally idli podi or chutney podi is ready to serve with idli or dosa of your choice.

Store them in air tight container.
