Vegetable Soup/Veg Soup

Vegetable soup or veg soup is a primarily liquid food, generally served warm or hot (but may be cool or cold). Usually soups are made with vegetables, meat or with vegetable stock or meat stock, or water. Soups are similar to stew. So, the ingredients used in this recipe are finely chopped carrot, beans, cabbage, onion, garlic, ginger, pumpkin, chopped coriander leaves, spring onions, oil, green chili, curry leaves, fresh pepper powder, salt to taste, water as required, turmeric powder, tomato, lime juice.

Even we can other vegetables like finely chopped cauliflower, broccoli, mushroom, sweet corn, broad beans, peas etc., For thickening the soup we can add in corn flour mixed with water but here in this recipe I have skipped it.

Vegetable Soup

Vegetable soup is one of the healthy liquid recipe and it is ideal for dinner. Soups are usually good for digestion and cold.

  • Large bottom pan
  • 1 tsp Oil
  • 5 Garlic finely chopped
  • ⅛ tsp grated ginger
  • Few curry leaves
  • 1 Finely chopped Green Chili (Optional)
  • 2 Finely chopped Shallot onions
  • 1 Carrot chopped
  • 5 Beans chopped
  • 2 tbsp Chopped pumpkin
  • ¼ cup Spring Onion
  • ½ cup Chopped Cabbage
  • Finely chopped Coriander leaves
  • 1 Chopped Tomato
  • ¼ tsp Freshly crushed pepper (Add as per taste)
  • 1 tsp Lemon juice
  • Pinch of turmeric powder
  • Salt as per taste
  • 3 cups Water
  1. Heat a pan and add in oil, garlic, ginger, green chili, onion, tomatoes. Fry for a minute.

  2. Add in freshly chopped carrot, beans, cabbage, pumpkin, spring onions, curry leaves.

  3. Add in turmeric powder, salt to taste. Close the lid and allow it boil for 5 minutes.

  4. Garnish it with chopped coriander leaves and Crushed pepper. Boil for 1 minute and switch of the flame.

  5. Finally add in lime juice and serve hot.

Methods: How to make Vegetable Soup

Heat a pan and add in oil, finely chopped garlic, ginger, green chili, shallot onions. Fry for a minute in low flame.
