Firstly heat a pot, then add in oil, sliced onions, few curry leaves. Give a mix and cook for another 2 to 3 minutes in low flame.
Then add in chopped tomato, lemon grass, ladies finger, and salt to taste. Cook till the tomatoes become soft.
Later add tamarind water.
Further add in curry powder or even we can replace it with red chili powder, coriander powder.
In a mixer, jar add in onion, ginger, garlic, and cayenne chilies/serrano. Or any other chilies available at home. Grind it into a smooth paste.
Later add in the ground paste and give a mix.
Add in the required water and allow it to boil.
Once the curry starts boiling add in cleaned fish, and then close the lid and cook for 15 to 20 minutes on low flame.
Once the fish is cooked completely, garnish it with chopped coriander leaves.
Finally, MALAYSIAN ASSAM FISH CURRY is ready to serve.
