Firstly soak chana for 6 to 8 hours or overnight.
Later transfer to pressure cooker, add in salt to taste.
Pressure cook it for 4 to 5 whistles.
After pressure cooking, smash chana with the help of your finger, if it smashes smoothly then it is cooked completely.
Now heat a pan and add in oil, cloves, cinnamon, bay leaf.
Then add in chopped onions, green chilies. Saute for 2 minutes in low flame.
Then add in finely chopped ginger, chopped tomatoes. Then close the lid and cook till the tomatoes becomes soft and smash.
Then add in red chili powder, coriander powder, garam masala or chana masala powder. Saute till the raw smell of the masalas goes away completely.
Now add in cooked chana and give a mix. Close the lid and cook for another 5 minutes.
Finally add in kasuri methi.
Then add in jaggery. It helps to enhance the taste of the masala. Cook for another 3 minutes and switch off the flame.
Finally quick and tasty Chana Masala or Chickpea Masala is ready to serve.
