Vada Pav Chutney

Vada Pav or Wada pao, is a simple and tasty evening snack recipe. The dish is made up of a deep fried potato dumpling placed inside a bread pav, sliced almost in half. It is generally accompanied with mint chutney or green chutney or with tomato sauce. It is one of the popular street food in Mumbai. It is also called as Bombay burger because of its resemblance in physical form of a burger. So, the ingredients used in this recipe are pav bun or Ladi Pav, for potato dumplings we need boiled potato, green chili, oil, curry leaves, turmeric powder, mustard seeds, coriander leaves, green peas, hing, gram flour, salt to taste, red chili powder, kashmiri chili powder, Mint chutney.

How to make Vada Pav Recipe:

Vada PAv
Firstly clean and pressure cook potatoes for 3 whistles. Later allow it cool and peel the skin of the potatoes and keep it aside.

Heat a pan and add in oil, mustard seeds, cumin seeds, chopped green chilies, curry leaves, turmeric powder, hing, green peas and salt to taste.

Add in smashed potatoes and garnish it with chopped coriander leaves.

Finally give a mix and the potato stuffing is ready.

Make big lemon size balls and keep it aside.

Take a mixing bowl and add in besan flour, turmeric powder, red chili powder, salt to taste.

Add in required water and give a mix without any lumps.

Now dip the potato balls into the prepared besan flour batter carefully, so that the batter is coated all the sides.

Deep fry the dipped potato balls till it turns golden brown.

Take a pav bun or Ladi Pav and slightly cut into half. Then add in green chutney and place the fried potato dumplings inside a bread bun.

Ingredients
  

Potato Stuffing

  • 4 Big Potatoes
  • 2 Green Chilies
  • 2 string Curry leaves
  • tsp Mustard seeds
  • 1 tbsp Oil
  • Pinch of turmeric powder
  • Pinch of hing
  • ¼ cup Garnish with chopped coriander leaves
  • Salt to taste

Gram flour batter

  • 1 cup Gram flour
  • 1 tsp Red chili powder
  • tsp Turmeric powder
  • Salt to taste
  • Water as required

Vada Pav

  • 4 Pav Buns

Instructions
 

  • Firstly clean and pressure cook the potatoes for 3 whistles. Then peel the skin of the potatoes and keep it aside.
  • Then heat a pan and add in oil, mustard seeds, green chilies, curry leaves, turmeric powder, hing and salt to taste.
  • And then add in boiled smashed potatoes and give a quick mix.
  • Finally garnish it with finely chopped coriander leaves and give a mix.
  • Then make a big lemon sized balls and keep it aside.
  • Now for preparing take a mixing bowl and add in gram flour, turmeric powder, red chili powder and salt to taste. Give well.
  • Then add in required water to get the right consistency of a bonda batter. Give a mix without any lumps.
  • Now dip the potato dumpling into the gram flour batter and deep fry them till it turns golden brown.
  • Later take a vada pav and cut into slightly half and apply some green chutney and place the potato dumplings inside the pav bun. Finally the vada pav is ready to serve.
