Coconut Mushroom Rice

Coconut Mushroom Rice is a healthy, tasty and delicious flavorful rice recipe with step by step pictures, instructions and videos are given below. It goes well with vegetable korma, any gravy of your choice. It is very simple and easy to prepare with less ingredients available at home.

Ingredients:

Fresh coconut milk, basmati rice, mushroom, curry leaves, green chilies, bay leaf, cloves, cinnamon stick, cardamom, fennel seeds, oil, ghee, coriander leaves, water as required, salt to taste.

Methods:

How to make Coconut Mushroom Rice:

  1. Firstly heat a pan and add in oil, ghee, bay leaf, cloves, cinnamon, cardamom.
  2. Then add in sliced onions, green chilies, curry leaves. Saute till the onions becomes soft or translucent.
  3. Then add in ginger garlic paste and fry till the raw smell goes away completely.
  4. Then add in cleaned and cut mushrooms and cook for 3 to 5 minutes. (no need to add water as the mushroom itself leaves the water).
  5. Then add in required coconut milk, salt o taste. And then allow it to boil.
  6. Add some chopped coriander leaves.
  7. Then add in soaked basmati rice.
  8. Then add in cut tomato. Then close the lid and cook till the rice is completely cooked.
  9. Finally the healthy and tasty flavorful Coconut Mushroom Rice is ready to serve.

  • 1½ cups Basmati rice (soaked)
  • 200 grams Mushroom
  • 3 cups Coconut milk
  • 2 Bay leaf
  • 4 Cloves
  • 1 inch Cinnamon
  • 2 Cardamom
  • 2 tbsp Oil
  • 1 tsp Ghee
  • 2 spring Curry leaves
  • Coriander leaves for garnishing
  • Salt to taste
